The Country Club of Virginia (CCV) is one of America’s oldest and most distinguished private member-owned clubs. Established in 1908 and located in Richmond, Virginia, CCV offers a rich history combined with state-of-the-art facilities. As one of the nation’s largest full-service country clubs, the club supports over 8,000 members and spans 1,111 acres, featuring two expansive clubhouses located seven miles apart, 54 holes of championship golf, extensive tennis and squash courts, a premier 100,000 square foot fitness complex, multiple swimming pools, and a variety of dining options including five dining outlets and three snack bars. The club is renowned not only for its outstanding amenities but also for its commitment to exceptional hospitality, earning a top ranking, #7, on the prestigious Platinum Clubs of America list and recognition as one of Richmond’s Top Workplaces. With a dedicated staff of over 800 employees during peak seasons and an operating budget exceeding $52 million, CCV is committed to providing an unparalleled member experience in a welcoming, professional, and service-oriented environment.
The Executive Sous Chef role at The Country Club of Virginia represents a critical leadership position within one of the nation’s most respected private club culinary operations. This role reports directly to the Executive Chef and collaborates closely with a second Executive Sous Chef to oversee and execute culinary operations across multiple venues and departments. These include the Banquets department, Purchasing department, and seasonal operations. The Executive Sous Chef will actively participate in managing a complex, multi-unit food service operation comprising a la carte dining, large-scale banquets, specialty events, and seasonal venues, ensuring the delivery of exceptional culinary experiences that uphold the club’s high standards for quality, consistency, and creativity.
This leadership position demands a hands-on management style and a passionate culinary professional dedicated to continuous improvement. The selected candidate will mentor and develop the culinary team, including Chefs de Cuisine and culinary supervisors, fostering a culture of accountability, collaboration, and professional growth. The Executive Sous Chef will be instrumental in recruitment, onboarding, and training efforts designed to build a high-performing culinary staff capable of delivering outstanding member and guest experiences in a luxury private club setting.
Core responsibilities encompass developing diverse and innovative menus that blend traditional comfort club fare with contemporary American and ethnic-influenced cuisines, as well as orchestrating elaborate VIP events ranging from intimate wine dinners to large-scale functions serving up to 1,000 guests. With annual food sales reaching up to $9 million and total food and beverage sales of approximately $11.5 million, this role carries significant financial oversight responsibilities. The Executive Sous Chef must manage labor and food costs effectively within a $4.5 million labor budget and maintain the desired food cost target of 36%, balancing a sales mix of 50% a la carte and 50% banquet.
Operating across seven kitchens and supported by a talented team of approximately 125 kitchen employees during peak seasons, this role requires outstanding organizational skills and the ability to handle multiple priorities effectively. The Executive Sous Chef plays a vital role in sustaining the club’s exceptional culinary standards, building strong relationships with members and staff, and actively engaging with club leadership across departments such as Special Events, Communications, Human Resources, and Facilities Maintenance.
Overall, the Executive Sous Chef at CCV is a prestigious and dynamic position within a stable culinary leadership team that has historically demonstrated longevity and excellence. The club offers a competitive salary commensurate with experience and an attractive benefits package including a 401(k) plan with employer contribution and match, comprehensive medical, dental, and vision insurance, fully paid life and disability coverage, flexible spending accounts, and complimentary employee meals during work hours. The Country Club of Virginia also maintains a drug testing and criminal background screening policy for all new hires, ensuring a professional and secure work environment. This position is an outstanding opportunity for a motivated culinary leader who values tradition, innovation, and service excellence within a prominent private club setting.
