Job Qualifications
- Degree from post-secondary or certification in culinary arts program preferred
- 3-5 years experience as cook, sous chef or kitchen manager with proven growth track record
- management experience including hiring, coaching, performance management, discipline and counseling
- knowledge of kitchen equipment
- awareness of occupational hazards and safety precautions
- knowledge of food handling and preparation principles
- ability to supervise kitchen staff in absence of Executive Chef
Job Duties
- Prepare or directly supervise kitchen staff responsible for daily preparation of soups, sauces and specials ensuring methods of cooking, garnishing and portion-sizing go as per standard recipes
- assist Executive Chef with monthly inventories, pricing, cost controls, requisitioning and issuing for food production
- assist Executive Chef with supervision and training of employees, sanitation and safety, menu planning and related production activities
- maintain standards of quality, cost, presentation, and flavor of foods
- assist Executive Chef with budgeting and planning, monitoring financial results and taking corrective action as necessary
- recommend maintenance and repair of kitchen equipment
- prepare reports, arrange employee schedules, manage menu costs, perform other administrative duties assigned by Executive Chef
- consult with dining service personnel during daily line-ups
- maintain security of kitchen including equipment and food/supply inventories
- assist in food procurement, delivery, storage and issuing
- expedite food orders during peak service hours
- check preparation and presentation of food items before service
- report all member and guest complaints to chef and assist in resolving complaints
- attend manager and staff meetings as needed
- perform other tasks assigned by Executive Chef
