The Culinary Manager role at Atlantic Fields is integral to maintaining the high standards of the club's food and beverage operations. This position entails working collaboratively with culinary and F&B leadership to establish exemplary culinary standards and foster a culture of continuous improvement. The Culinary Manager will be responsible for the recruitment, training, and management of kitchen staff, as well as overseeing the preparation and execution of food production across all club outlets. Effective budget management is crucial, with a goal of minimizing labor, operational, and food costs while preserving quality.

This leadership role includes scheduling kitchen teams in alignment with business volume to optimize labor efficiency. The Culinary Manager will take a hands-on approach in elevating food quality and sanitation standards, developing standardized recipes, signature items, and practicing portion control. Monitoring food tracking systems and collaborating closely with the Director of Culinary are essential to innovate menu offerings that meet members' preferences and expectations.

Another key responsibility includes aiding in the coordination of special events and catering projects, ensuring smooth execution by preparing detailed prep lists and menus for every meal period. The role requires strong personnel management skills to evaluate and guide kitchen staff performance, administering fair and compliant corrective actions when necessary. Timely submission of operational reports and active participation in weekly management meetings are part of the routine responsibilities.

Maintaining a motivated and cross-trained kitchen team capable of operating and cleaning equipment and various food service areas is vital to operational success. The Culinary Manager is also responsible for upholding rigorous food safety standards, including compliance with HACCP protocols and local regulations, alongside adherence to health, safety, security, loss control policies, and government legislation.

Job Qualifications

  • culinary degree or pedigree
  • seven to ten years of culinary experience in large world class resorts, hotels and clubs
  • prior culinary leadership experience in high end restaurants, resorts, or private clubs preferred
  • complete knowledge and understanding of all cookery techniques and processes
  • knowledge of f&b operational requirements
  • thorough knowledge of food products both local and imported
  • experience sourcing local ingredients and creating menu items based on seasonal ingredients
  • thorough understanding of occupational health and safety issues

Job Duties

  • work with all culinary and f&b leaders to create exemplary culinary standards and an environment of continual improvement
  • hire and train staff to prepare and execute all food production for all club outlets
  • create and follow departmental budgets to minimize labor, operational and food costs
  • schedule working hours of all kitchen employees considering expected business volume and labor cost conservation
  • continually strive to raise food quality and sanitation standards
  • assist in developing standardized recipes, signature items and portion control
  • implement and monitor food tracking systems
  • work with Director of Culinary to plan menus that enhance dining outlets and cater to members' needs
  • assist in planning special events and catering projects ensuring well execution by line staff
  • evaluate job performance of kitchen staff and take corrective or disciplinary actions fairly
  • submit weekly and monthly operational reports for review
  • regularly attend weekly manager meetings
  • motivate and develop a team capable of maintaining and cleaning kitchen equipment and service areas
  • ensure high level of food safety management system including HACCP compliance and local regulations
  • ensure adherence to safety, health, security, and loss control policies and government legislation
  • perform other duties as assigned
