The CARTI Hope Bistro, an integral part of the Central Arkansas Radiation Therapy Institute (CARTI), is a prominent food service establishment dedicated to providing quality dining experiences while supporting the community it serves. Known for its commitment to excellence, the Bistro operates with a strong focus on both customer satisfaction and operational efficiency. As part of a larger healthcare and wellness organization, CARTI Hope Bistro combines culinary services with a mission-driven approach to enhance the experience of patients, visitors, and staff. The Bistro also extends its reach beyond its primary location through the CARTI Food Truck, which caters to various events, community gatherings, and private functions. The role of Executive Sous Chef at the CARTI Hope Bistro is a critical leadership position that demands a blend of culinary expertise, team management, and operational oversight. Reporting directly to the Executive Chef, the Executive Sous Chef is responsible for overseeing daily kitchen activities, including food preparation, production, sanitation, and staff training to ensure the highest standard of quality and service. This role encompasses supervisory duties that require managing a team of Bistro staff, guiding them through efficient workflows, and maintaining adherence to food safety and sanitation regulations at all times. In addition to the core kitchen responsibilities, the Executive Sous Chef oversees the CARTI Food Truck's operations, which includes managing team members, ensuring food quality, handling cash transactions, and maintaining equipment and vehicle upkeep. This dual responsibility makes the position uniquely challenging and rewarding, calling for adaptability and thorough knowledge of both stationary kitchen and mobile food service environments.
Candidates for this role must demonstrate substantial experience in food service management, with a minimum of five years in similar hospitality or kitchen management roles. Prior experience managing a food truck is preferred, alongside the ability to safely operate the vehicle. The Executive Sous Chef will also assist in menu planning and collaborate closely with the Executive Chef on the design of food and drink menus. Job Duties
- Oversees and supervises Bistro team members
- trains new team members
- ensures efficient, cost-effective operation and profitability of food production
- performs preparation work including washing, peeling, cutting and seeding of fruits and vegetables
- carries pans, kettles and trays of food safely
- inspects all preparation and cooking equipment for cleanliness and proper operation
- replenishes supplies and maintains service area cleanliness
- stores food according to safety and rotation procedures
- uses approved recipes and standards to ensure quality and portion control
- adheres to sanitation and safety requirements
- ensures high quality food presentation and timely serving
- serves customers courteously and resolves complaints
- collaborates with Executive Chef on menu planning, inventory and supply management
- manages day-to-day operations of the CARTI Food Truck including team management, food production, cash handling, guest interaction, quality control, and sanitation
- assists in planning and scheduling event participation
- maintains food truck and equipment maintenance schedules
- keeps required records on food production and inventory
- coordinates with marketing for promotional activities
- relays relevant information to Executive Chef
- performs other duties as assigned
