The Executive Sous Chef role at The Vineta Hotel is a pivotal leadership position within the culinary team, acting as the second-in-command in the kitchen hierarchy. Reporting directly to the Executive Chef, the Executive Sous Chef plays a critical role in overseeing kitchen operations to ensure the highest standards of food quality, safety, and service are consistently met. This role is designed for an experienced culinary professional passionate about maintaining excellence, training kitchen staff, and contributing creatively to the hotel’s prestigious culinary offerings.

In this role, the Executive Sous Chef supervises kitchen hoteliers, manages food preparation, enforces quality control measures, and oversees inventory management. The position requires direct engagement in culinary operations including preparing dishes, managing portion control, monitoring food freshness, and maintaining compliance with health and safety regulations. Additionally, the Executive Sous Chef is responsible for mentoring junior chefs and line cooks, thereby fostering skill development and promoting a culture of empowerment and teamwork.

The candidate will also be expected to step in and operate the kitchen with full responsibility in the absence of the Executive Chef, making critical decisions regarding the timing and presentation of dishes. This role demands strong leadership qualities, excellent organizational skills, and the ability to inspire and motivate a diverse team within a fast-paced, high-pressure environment. This full-time position requires flexibility in working hours including days, evenings, weekends, holidays, and overnight shifts. The ideal candidate will have a minimum of five years of five-star culinary experience, a recognized culinary degree or diploma, and experience in renowned upscale restaurants or hotels. Proficiency in English is essential, and additional languages are considered an asset. Physical ability to perform kitchen tasks that require reaching, bending, balancing, and lifting up to 50 pounds is mandatory given the demanding nature of the work environment.

Job Duties

  • Supervise kitchen hoteliers including line cooks, prep cooks, and dishwashers to ensure efficient performance
  • oversee and participate in food preparation, ensuring adherence to the hotel’s culinary standards
  • monitor portion control, food quality, inventory levels, proper storage, freshness, recycling practices, and labor costs
  • maintain inventory levels, place order supplies, and ensure ingredient freshness
  • train and mentor new and junior kitchen staff, developing their culinary skills
  • manage kitchen operations in the absence of the Executive Chef, making decisions on food preparation, timing, and plating
  • ensure compliance with health and safety regulations by maintaining cleanliness and safety in all kitchen and prep areas
  • monitor and ensure daily cleaning of kitchen equipment such as exhaust hoods, stoves, ovens, and freezers
  • verify that received goods meet hotel standards
  • demonstrate positive leadership to inspire the team, promote empowerment, and build morale
  • interact with guests to resolve any issues satisfactorily
  • uphold personal appearance and hygiene standards as a professional role model
  • foster creativity, commitment to service excellence, and gracious hospitality within the kitchen team
