The Executive Chef role at Lantana Golf Club is a leadership position essential to maintaining the high standards of culinary excellence that the club upholds. Working in close partnership with the Executive Chef, the selected candidate will be responsible for directing and coordinating all activities within the culinary department, including the supervision and management of culinary staff. This position includes oversight of specific areas such as Banquets or a la carte service, ensuring that all kitchen operations run efficiently and meet the club's operational standards. The Executive Chef plays a vital role in maintaining compliance with national programs such as those related to menu control, approved product lists, and inventory procedures.
Beyond operational management, this role demands a strong leadership presence to select, develop, and retain talented culinary staff. The Executive Chef is responsible for supervising daily kitchen operations to guarantee product quality and timely service to guests. Financial acumen is also important in this role, as the Executive Chef will work to meet financial targets and ensure accounting procedures are consistently followed. An essential aspect of the job is the focus on guest satisfaction, responding promptly and courteously to guest requests and ensuring their experience exceeds expectations.
Additional responsibilities include upholding cleanliness and sanitation in the kitchen in compliance with local, state, and federal laws and regulations. Flexibility is critical, as the Executive Chef must be prepared to work in any kitchen position as needed and assist in creating standard and custom menus, special features, and more. Maintaining clear and constant communication with other departments is crucial to keep all team members informed about special programs and events, thereby supporting seamless operations throughout the club.
The role requires a skilled culinary leader with a strong attention to detail, exceptional planning and organizational skills, and proven experience leading a culinary team. Candidates should have a high school diploma or equivalent, with preference given to those holding a bachelor’s degree, culinary degree, or certificate. Experience supervising kitchen staff in a fast-paced environment, along with effective verbal and written communication abilities, is highly desirable.
The Executive Chef must possess or be able to obtain necessary certifications, including a food service permit as mandated by local or state government agencies and ServSafe certification within 30 days of hire. The job often includes working nights, weekends, and holidays, requiring resilience and dedication. Physical demands include moving throughout the kitchen, handling products and utensils, lifting up to 50 pounds, and regularly engaging with staff and management. This role also involves significant cognitive demands, such as problem-solving, training, budgeting, and inventory management.
