Job Requirements

  • Minimum two years of post-secondary education
  • At least five years of related work experience
  • Culinary education preferred
  • Experience in hotel operations preferred
  • Strong leadership and management skills
  • Ability to manage budgets and control costs
  • Compliance with federal, state, corporate and franchise regulations
  • Effective communication skills
  • Willingness to work a flexible schedule including weekends and holidays

Job Qualifications

  • Two plus years of post high school education, culinary education is desirable
  • Five plus years of employment in a related position
  • Hotel experience preferred
  • Advanced knowledge of food profession principles and practices including management of people and food beverage operations
  • Knowledge of hotel operations including marketing, security and safety, labor relations, business plans, budget forecasting, quality assurance, hospitality law, and long-range planning
  • Leadership skills to motivate and develop staff
  • Ability to work effectively under time constraints and deadlines
  • Effective verbal and written communication skills adapting to different audiences

Job Duties

  • Manage the daily production, preparation and presentation of all food for the hotel's restaurant(s) and room service to ensure a quality, consistent product
  • Manage human resources in the kitchen including interviewing, hiring, training, scheduling, coaching, performance and salary reviews
  • Schedule and manage maintenance and sanitation of kitchen, equipment and related areas ensuring compliance with health and safety regulations
  • Monitor, analyze and control all labor and food costs, prepare reports and schedules to meet budget goals
  • Promote accident prevention programs to minimize liabilities
  • Assist the Executive Chef with menu creation, costing, and implementation
  • Assume Executive Chef responsibilities in their absence
  • Comply with attendance rules and maintain regular availability
  • Perform other job-related duties as assigned
