Job Requirements
- College degree in culinary arts
- Extensive experience in high volume professional kitchen
- Proven ability to develop and execute creative seasonal menus
- Strong leadership skills and experience managing culinary teams
- Knowledge of food safety and allergen protocols
- Excellent interpersonal communication skills
- Ability to manage budgets and control costs
- Availability to attend all required meetings and lead the culinary team
- Physical ability to perform culinary and kitchen duties
Job Qualifications
- College graduate in culinary arts
- Extensive experience working in a high volume professional kitchen
- Proven track record of creating creative menus reflecting seasonal availability
- Strong leadership and team mentoring skills
- Thorough knowledge of food allergens and guest safety procedures
- Excellent communication and organizational skills
- Ability to manage kitchen cleanliness and safety standards
Job Duties
- Attract retain and motivate the best culinary talent
- Act in the absence of the executive chef to complete daily ordering using current par levels for all outlets employee cafeteria and banquets
- Perform any function within the culinary department such as cook steward etc
- Conduct daily walk throughs of the kitchen and recommend corrections repairs cleanliness concerns and improvements
- Conduct daily meetings with the team to ensure preparation and communicate all pertinent information
- Attend weekly food and beverage meetings banquet event order meetings leadership meetings monthly safety meetings and represent the culinary team
- Manage finances analyze and control costs and manage the budget to achieve profitable operation
