The Executive Sous Chef role at Proof of the Pudding is a senior culinary leadership position situated at Citizens Bank Park, home of the Philadelphia Phillies. This key role is responsible for supporting all food and beverage operations across the venue, including the Executive Dining Room, Employee Dining Room, and Press Media Room. The Executive Sous Chef will play a crucial part in interactive culinary execution, ensuring that all menu items align with the company’s high standards of quality and consistency. This position demands a seasoned professional with extensive experience working in stadium and catering environments who excels in fast-paced, high-volume situations. The ideal candidate will demonstrate strong leadership skills, an ownership mentality, and a robust capacity for managing both culinary staff and operational logistics.

Primary duties of this role include assisting in overall culinary management, facilitating menu planning and execution for game days and special events, mentoring and training kitchen staff, maintaining safety and sanitation standards, and contributing to the development of creative menu items. Furthermore, the Executive Sous Chef will support budget preparation, inventory control, food ordering, and staff scheduling to align with the business demands. Leadership qualities such as excellent communication, interpersonal skills, and the ability to foster a positive kitchen atmosphere are essential.

The role involves both office and kitchen responsibilities, requiring the ability to work with computer systems and traditional kitchen equipment. Physical demands include prolonged periods of standing and movement, as well as the capability to lift and carry items weighing approximately 30 pounds. Job Requirements

  • Five plus years of leadership experience in sports and entertainment premium hospitality operations
  • Degree or formal training in Culinary Arts, Hospitality Management, or equivalent professional experience
  • Knowledge of Microsoft Office, internal and external email communications, and purchasing procedures
  • Strong operational knowledge of budget and financial management, labor, and food cost controls
  • Proven ability to manage inventory, ordering, and cost controls in high-volume operations
  • Must reside in Philadelphia, PA
  • Ability to produce a consistent product in a high-volume environment
  • Exceptional communication and interpersonal skills
  • Ownership mentality
  • Exceptional knife skills and culinary knowledge

Job Duties

  • Assist in all culinary aspects of Citizens Bank Park
  • Facilitate the planning and execution of game-day and event menus
  • Assist in the training, mentoring, and hiring of kitchen staff
  • Produce a consistent product in a high-volume environment
  • Ensure proper safety and sanitation of all kitchen and food service areas
  • Develop and implement creative menu items
  • Maintain overall morale of the kitchen and culinary team
  • Schedule staff and food production according to business demands
  • Assist Executive Chef with logistical planning and event execution
  • Support ordering, budget preparation, inventory control, menu development, financial reports, and scheduling
