This role invites passionate culinary leaders to join True Food Kitchen as a line chef and back-of-house manager who will be integral to the operations of a high-volume, fast-paced restaurant environment. The position demands a strong ability to manage kitchen operations including opening and closing the line, precise line checks, and facility walks. The candidate will take a leading role during busy service periods ensuring quality and presentation standards are met while actively collaborating with both front and back of house teams. A key responsibility includes hiring, developing, and managing back of house staff with a focus on scheduling, payroll compliance, and fostering a productive team environment. This role requires partnership with the executive chef to manage profit and loss statements, focusing on maximizing profitability through meticulous food cost management, labor oversight, and inventory controls. Additionally, the candidate will assist with ordering and invoicing of products and maintain continuous communication with the front of house team to ensure standards and protocols are consistently followed.

Job Requirements
- Minimum 3 years experience as a chef in a high volume full-service restaurant
- Strong culinary skills and knowledge of food safety standards
- Proven leadership and team management experience
- Ability to manage financial aspects of restaurant operations
- Excellent communication and organizational skills
- Ability to work in a fast-paced, high volume environment
- Compliance with state labor laws and company policies
Job Qualifications

Job Duties
- Opens and closes the line with precise line checks and facility walks
- Performs EcoSure inspections with proper documentation adhering to company standards and addresses deficiencies
- Runs high volume service periods from expo or wheel position ensuring food quality and presentation
- Collaborates with back of house and front of house teams
- Participates in EcoSure and health inspections ensuring a safe production environment
- Responsible for hiring, developing and managing schedules of back of house employees while reporting payroll in compliance with company standards and state laws
- Partners with executive chef to manage P and L focusing on food cost management, labor, inventory control and restaurant performance
- Assists in ordering and invoicing of products
- Maintains consistent communication with front of house team to ensure adherence to True Food Kitchen guidelines
