The role of the Kitchen Manager at Pursuit is integral to maintaining the highest standards of culinary excellence across its multiple locations. This position assists the Executive Chef in overseeing day-to-day kitchen operations and ensures food quality, taste, and presentation meet Pursuit’s distinguished benchmarks. The Kitchen Manager supervises kitchen staff to maintain efficient food production and actively participates in the development of new recipes, seasonal menus, and special event offerings. Ensuring compliance with food safety and sanitation standards is paramount, and the manager plays a key role in training and mentoring back-of-house staff while managing inventory and controlling labor and food costs.

A successful candidate will possess at least 5 years of progressive kitchen experience, including a minimum of 2 years in a leadership capacity, preferably in high-volume and fine-dining environments. They will demonstrate expertise in culinary techniques, inventory control systems, and kitchen safety regulations, including ServSafe and/or Alaska Food Handler certification. Job Requirements

Job Qualifications

Job Duties

  • assist the executive chef in overseeing day-to-day kitchen operations
  • supervise and coordinate kitchen staff activities to ensure efficient food production
  • maintain high standards of food quality, taste, and presentation
  • develop and test recipes and contribute to new dishes, food specials, and seasonal/special event menus
  • ensure kitchen safety and sanitation compliance with food safety regulations and HACCP plans
  • monitor inventory levels and assist in ordering supplies
  • provide training, mentoring, and performance feedback to back-of-house staff
  • assist in scheduling kitchen personnel and managing labor costs
  • act as executive chef in the absence of the executive chef
  • collaborate professionally with front-of-house team to ensure seamless guest service
  • participate in special events, banquets, and catering services as needed
  • handle customer feedback professionally and make necessary adjustments
  • assist storeroom staff with proper ordering and transferring procedures
  • oversee deliveries for accuracy and complete necessary paperwork including ordering, inventory counts, invoice processing, labor reports, and scheduling
  • participate in health and quality assurance inspections ensuring staff certification
  • enforce and follow all Pursuit policies and regulations
  • participate in monthly inventories
