One of the flagship properties managed by Pyramid Global Hospitality is the Deloitte University Hotel & Conference Center in Westlake, Texas. This high-end private hotel and conference center, known as Deloitte University, caters exclusively to professional clientele and is closed to the public. Featuring 1,400 single-occupancy hotel rooms, nine restaurants and lounges including Starbucks and Seattle's Best Coffee, and expansive meeting spaces totaling 200,000 square feet, the property offers a unique and upscale hospitality environment. The Executive Pastry Chef role at Deloitte University Hotel & Conference Center is a pivotal leadership position responsible for overseeing the daily operations of the pastry kitchen. This includes managing preparations for banquet events, coffee shops, coffee breaks, and bulk food production for the property's various restaurants. The Executive Pastry Chef leads a dedicated team by recruiting, training, coaching, and evaluating staff performance while maintaining compliance with company standards and policies. This position also involves menu innovation through seasonal recipe development, ensuring high-quality food production, and managing kitchen sanitation and inventory.

Central to the role is the financial stewardship of the kitchen’s labor, food costs, and other related expenses. The Executive Pastry Chef works collaboratively with restaurant chefs to meet menu demands and continuously improve food quality and selection. Job Requirements

  • High school diploma or equivalent
  • three years' pastry experience in multi-unit hotel or conference center
  • two years' experience as Pastry Sous Chef or Chef in high-volume hotel or restaurant
  • culinary internship, apprenticeship or degree preferred
  • pastry certification preferred
  • strong computer skills including proficiency in Microsoft Excel and Outlook
  • manager food safety certification required within 30 days of employment
  • ability to manage, train and lead a team
  • strong organizational and time management skills
  • ability to develop new menu items and maintain kitchen sanitation standards

Job Qualifications

  • Three years' pastry experience in a multi-unit hotel or conference center
  • two years' experience as a Pastry Sous Chef or Chef in a high-volume hotel or restaurant
  • culinary internship, apprenticeship or degree preferred
  • pastry certification preferred
  • strong computer skills

Job Duties

  • Responsible for recruiting, interviewing, training, coaching, discipline and conducting performance appraisals for direct reports
  • creating schedules and approving employees' time, time off and shift changes
  • assign, train, support and direct staff to carry out their roles efficiently while maintaining property standards
  • coach, develop and provide feedback to staff for continued growth
  • produce all baking for banquet events, coffee shops, coffee break stations, and restaurants bulk needs
  • research, create and execute new seasonal menu items
  • oversee kitchen sanitation and address concerns
  • assist in overseeing kitchen inventory to ensure product procurement and stock levels
  • collaborate with restaurant chefs to meet bulk menu needs and ensure food quality
  • manage financials for labor, food cost and other kitchen expenses
