The pay range for this position is approximately $78,400 to $105,800 annually, with potential additional earnings through performance-based bonuses or uncapped sales incentive plans. This role not only requires culinary skill but also a strong aptitude for team leadership, financial oversight, and operation management, which are critical to delivering exceptional dining experiences to guests.

As the Executive Chef at Wuksachi Lodge, you will manage all culinary operations, including the recruitment, training, and mobilization of kitchen and service teams. You will be responsible for developing and maintaining innovative recipes and portion controls, managing purchasing budgets, and ensuring compliance with health and company standards. Operational leadership includes preparing detailed reports highlighting progress and challenges and proposing strategies for ongoing success. The position demands a deep understanding of food and labor cost management, inventory control, and staff management procedures including hiring, counseling, and termination. The Executive Chef must also be adept at managing schedules and working seamlessly with company financial processes such as invoice and labor tracking systems. Being able to drive company vehicles on the property is also part of the role.

The ideal candidate should have at least two years of experience as an Executive Chef in a high-volume, prestigious culinary environment, supplemented by a minimum of five years in established restaurants or catering companies. Preferred qualifications include formal education such as a certificate or degree in Culinary Arts, along with mandatory ServSafe and Food Safety Handler certifications. Strong financial acumen and proficiency in computer systems, including Microsoft Office and POS systems, are essential. Candidates must demonstrate excellent leadership skills capable of influencing team behavior and performance, possess a valid driver’s license, and maintain flexibility to accommodate the demanding and varied schedule, including days, evenings, weekends, holidays, and on-call duties.

Job Requirements

  • Minimum two years’ experience as an Executive Chef in a high-volume industry-leading concept
  • five years' culinary experience in established restaurants and catering companies

Job Duties

  • Hire, train, and mobilize kitchen and service teams
  • develop and maintain recipes, portion specifications, and standard preparation procedures
  • determine purchasing specifications and budgetary allotments for all menu items
  • prepare operational reports highlighting progress and adverse trends and make recommendations for success
  • maintain knowledge of and compliance with all company and health department policies, regulations, and standards
  • possess working knowledge of company invoice tracking, labor tracking, schedule preparation, food cost management, labor cost management, inventory control, and hiring, counseling, and termination policies
  • ability to drive company vehicles throughout property
