The Project Manager - Executive Chef role is a dynamic and vital position within CCL that combines leadership, culinary expertise, and operational management. This role requires an organized leader who actively participates in daily kitchen operations, including training personnel and overseeing food preparation. The Executive Chef serves as a culinary ambassador, delivering high-quality, visually appealing meals, and ensuring that all safety and sanitation standards are strictly adhered to. Responsibilities extend to developing menus, forecasting and production planning, food procurement adhering to specifications, and establishing proper job flows and scheduling for kitchen personnel in line with productivity goals.
Working closely with health, wellness, and nutritional directors, the Executive Chef collaborates on menu design and recipe development to meet the needs of the population served. The role also involves maintaining regulatory compliance documentation and managing financial reporting related to food production and kitchen operations. This position involves extensive travel, working in variable environments under diverse conditions, and requires a flexible schedule to meet the support needs of transitioning operations.

Job Requirements
- Minimum 5 years experience as an executive chef or chef manager
- Prior experience in dining service transitions and openings preferred
- Serve Safe, Choke Save and Allergen certification preferred
- Bachelor’s degree in food science, nutrition, culinary arts or hotel/restaurant management is highly desirable
- Certified Dietary Management program completion preferred
- Ability to work a flexible schedule including 10 days on and 4 days off
- Willingness to travel extensively up to 100 percent
- Must live within one hour of a major airport
- Valid driver’s license and reliable transportation required
- Ability to work in extreme conditions and with heated equipment
- Computer proficiency with multiple software programs
- Physical ability to perform repetitive motion, walking, standing, lifting, pushing, and carrying
Job Qualifications

Job Duties
- Manage the kitchen and all food production at all operations
- Implement regimented processes during facility transitions and new business openings
- Lead daily lineups and train staff on company culture and culinary standards
- Communicate effectively with residents, guests, and staff with appropriate sensitivity and timing
- Serve as the company representative of culinary brand and HACCP food safety standards
- Train new Executive Chefs and production staff on production systems and processes
- Develop and implement menus, job flows, schedules, and food tracking systems while ensuring budget adherence
- Collaborate with Health, Wellness, and Nutritional Director on menu and recipe development
- Monitor and maintain regulatory compliance and complete daily and weekly reporting
- Create and maintain strong relationships with residents, management, and staff
