The Executive Chef role at The Quoin Hotel is an exceptional opportunity for a dynamic culinary leader to shape and execute a visionary culinary program across multiple outlets within the property. The scope of this role demands not only a refined palate and creative expertise but also strong operational discipline and a strategic mindset. The Executive Chef will oversee wood-fired Northern Italian and Mediterranean-inspired cuisine at The Quoin Restaurant, the elevated small plates at Simmer Down speakeasy lounge, fireside fare at the Quoin Rooftop Bar & Lounge, bespoke in-room dining experiences, and a comprehensive private dining and events program.

This position requires an individual who can balance inventive culinary artistry with financial stewardship, driving both creative excellence and strong profitability. The Executive Chef will lead a high-performing culinary team, inspire innovation, manage full P&L accountability, and work closely with hotel leadership to strategically plan and forecast revenue. Given the luxurious yet approachable nature of The Quoin, the Executive Chef’s leadership will be vital in ensuring all culinary offerings authentically reflect Method Co.'s signature aesthetic and hospitality philosophy.

A critical element of the role involves expertly managing large-scale banquet events and private dining experiences, where flawless execution and customized menu development are paramount. The Executive Chef will collaborate with sales and events teams to increase revenue while maintaining the highest quality standards during weddings, corporate functions, and private celebrations hosted at the hotel.

Beyond culinary creativity and operational oversight, this role emphasizes brand alignment and guest experience. The Executive Chef is expected to continuously elevate The Quoin's culinary reputation in the Wilmington market through thoughtful activations, chef dinners, special programming, and partnership with marketing and leadership teams to create immersive dining experiences that resonate with an upscale clientele.

This position is ideal for a seasoned culinary professional with at least five years of senior leadership experience in luxury hotels or high-end restaurants, proven success managing multiple distinct outlets, and comprehensive banquet expertise. Job Requirements

  • Bachelor's degree or equivalent culinary education preferred
  • minimum 5 years senior culinary leadership experience in luxury or high-end establishments
  • proven success managing multiple distinct culinary outlets
  • demonstrated financial management skills including P&L ownership and cost control
