The Huntington Club, being one of the flagship properties, is currently seeking a highly skilled Executive Chef to lead its culinary operations. This role is pivotal to maintaining the club's reputation for exceptional dining experiences and innovative cuisine. As the Executive Chef, you will oversee the entire kitchen operation, including menu creation tailored to member preferences and private events, cost management, inventory supervision, and adherence to the highest sanitation standards. This executive role reports directly to the Vice President of Operations and involves close collaboration with other departments.
The Executive Chef acts as both a leader and mentor, setting a standard by cooking alongside the team and offering expert guidance. You will be responsible for developing and updating recipes, defining portion sizes, setting pricing strategies and food preparation procedures to maintain consistency and excellence. Budget management is a significant aspect of the role, requiring the development and weekly review of annual budgets to optimize culinary operations while controlling costs effectively.
Furthermore, the Executive Chef develops menus for member dining on a quarterly basis and for private events, ensuring innovative modifications in line with current culinary trends and member tastes. Personnel management is another crucial component, involving hiring, training, scheduling, and supervising kitchen and service teams to deliver impeccable service. Regulatory compliance with all local and federal laws, especially health and safety regulations, is strictly maintained, supported by organized cleaning schedules and regular inspections.

Job Requirements
- 4-year college degree or culinary certification
- minimum years experience as an executive chef in a high-volume industry-leading concept
- culinary experience in established restaurants and catering companies
- servsafe and food safety handler certifications required
- understanding of p and l's and budgeting
- ability to work flexible hours including nights, weekends, and holidays
- proficiency in Microsoft Office Suite, point-of-sale systems, and cooking machinery

Job Duties
- Lead and cook by example and provide guidance to all team members
- Ensure kitchen operations are established and can run smoothly and efficiently in your absence
- Develop and maintain recipes, pricing, portion specifications, and standard preparation procedures for all dishes and ensure all cooks follow these standards
- Develop annual budgets and review and adjust on a weekly basis
- Create menus for member dining on a quarterly basis and for private events with regular updates based on trends and tastes
- Uphold all state and federal laws pertaining to personnel management for staff members under control
- Coordinate training activities for kitchen and back-of-house associates to meet service level standards
- Hire, train, and mobilize kitchen and service teams to provide impeccable service
- Attend weekly food and beverage meetings to review results, plan future events and adjust strategies
- Determine purchasing specifications and budgetary allotments for all menu items
- Maintain compliance with company policies, service procedures, standards and health department regulations
- Follow scheduled cleaning routines
- Manage invoice tracking, labor tracking, schedule preparation, food and labor cost management, hiring, counseling, and termination policies
- Inspect events to ensure quality food preparation, service, cleanliness, sanitation, and employee appearance
- Adapt to changing situations while maintaining quality standards
- Perform all other duties assigned by senior management
