The Executive Chef role at MGM Resorts is a pivotal leadership position within the culinary operations of STAR's Employee Dining Room located inside the iconic MGM Grand Resort. This role is designed for a culinary leader who excels at blending creativity with operational expertise to produce outstanding dining experiences for employees and guests alike. The Executive Chef will be responsible for overseeing all restaurant outlets and kitchen operations within the dining facility, ensuring that every meal served meets the highest standards of quality, taste, and presentation.

In this role, the Executive Chef will lead a talented kitchen team, driving performance through effective management of fiscal budgets, labor productivity, scheduling, inventory control, and menu strategy development. The position requires a leader capable of inspiring their team while maintaining operational excellence and fostering a culture of teamwork, mutual respect, and continuous improvement. Additionally, the Executive Chef will participate in corporate and property meetings to represent kitchen operations, ensuring alignment with company goals and initiatives.

A significant aspect of this position involves maintaining stringent health, sanitation, and cleanliness standards to meet company compliance and regulatory requirements. The Executive Chef will also manage human resources responsibilities, including coaching, employee recognition, hiring, training, succession planning, and adherence to employment laws and collective bargaining agreements. Through close collaboration with divisional directors and other executive chefs, this role ensures seamless coordination and delivery of culinary products across multiple kitchen outlets.

Candidates applying for this position should possess a Bachelor's Degree or equivalent experience in a related culinary field, with at least two years of relevant experience as a Chef. Prior experience managing employees under a collective bargaining agreement, working in banquet kitchens, high-volume restaurants, or fine-dining establishments is highly preferred. Job Requirements

  • Bachelor's Degree or equivalent experience
  • Minimum 2 years of relevant culinary experience
  • Prior management experience in a culinary setting
  • Familiarity with collective bargaining agreements preferred
  • Ability to develop and manage budgets and labor productivity
  • Strong knowledge of food safety and sanitation standards
  • Effective interpersonal and leadership abilities

Job Qualifications

Job Duties

  • Oversee all restaurant outlets and operations reporting to the Property Chef and Assistant Property Chef
  • Lead and manage daily kitchen operations including fiscal budgets, labor productivity, scheduling, and inventory control
  • Develop and execute menu strategies to drive profitability and guest satisfaction
  • Represent kitchen operations in divisional, property, and corporate meetings
  • Enforce policies, operating procedures, training programs, and health and sanitation standards
  • Manage human resources responsibilities including coaching, hiring, training, and compliance with employment laws and collective bargaining agreements
  • Interact with guests to ensure satisfaction and address complaints appropriately
  • Collaborate with divisional directors, executive chefs, and kitchen teams to ensure seamless product delivery and quality
  • Maintain comprehensive knowledge of food and beverage products, menu items, and kitchen equipment
