The position of Food and Beverage Manager at PENN Entertainment is a pivotal role responsible for overseeing all aspects of food service operations within the company’s restaurant and banquet facilities. This leader manages food storage, preparation, production, and menu creation with a sharp focus on efficiency and cost management. They are charged with designing and coordinating menus across multiple outlets, ensuring quality, flavor, texture, and presentation meet the highest standards. A key responsibility is managing food-related costs and maintaining budget compliance for food service operations. The Food and Beverage Manager also ensures proper facility maintenance and food safety standards in all Food and Beverage areas, driving operational excellence. They directly manage food service staff and support employees engaged in food preparation and production while emphasizing professional development and safe handling practices.

Further, this role involves thorough review and monitoring of inventory usage to minimize spoilage, investigate and recommend menu changes, and collaborate with the Purchasing Manager regarding the availability of food items. Budget planning and expense monitoring, including food costs, labor, and other related expenses, form another critical part of the manager’s duties. Staffing and scheduling must be optimized to maintain excellent customer service and meet production demands. The role also includes managing utility and cleaning staff to maintain a sanitary and safe work environment. Clear communication with the team is fostered through regular meetings and updates to ensure well-informed staff members. The Food and Beverage Manager monitors coaching, counseling, and performance reviews to maintain consistent accountability and development of personnel. This position demands a leader who is passionate about delivering high levels of guest service, promoting a positive and fun work atmosphere, and driving continuous improvement in all aspects of the food service operations. Job Requirements

  • High school diploma or GED
  • equivalent to a college education with a thorough knowledge of Culinary Arts
  • 9 to 10 years of food preparation experience preferred
