At the heart of this mission is Horseshoe Baltimore, a premier casino and entertainment venue located in Baltimore, Maryland. Horseshoe Baltimore is seeking a passionate and dynamic Executive Chef to lead and transform its culinary department. This is an on-site, full-time position offering a competitive compensation package, ideal for an experienced culinary professional who thrives in high-volume and high-energy environments. The Executive Chef will oversee culinary operations across multiple outlets including three restaurants, a bake shop, a 24-hour employee dining room, and various banquet and special event functions. This role requires a strategic leader dedicated to rebuilding and elevating the food quality, team culture, and operational consistency.

The Executive Chef at Horseshoe Baltimore will be responsible for the end-to-end culinary management of the property, ensuring excellence in food preparation, presentation, and service across all food outlets. As the primary culinary leader, the Executive Chef must possess strong operational, administrative, and organizational skills, managing everything from labor scheduling and budget controls to food safety and regulatory compliance. The role demands a leader who is not only passionate about food but is also committed to developing and mentoring a diverse team, fostering accountability, engagement, and growth.

In this influential position, the Executive Chef will collaborate closely with Food & Beverage leadership, Human Resources, Facilities, and Engineering teams to establish streamlined kitchen workflows and operational procedures. The successful candidate will also play a key role in menu development, standardizing recipes, and updating menus seasonally to meet guest expectations while maintaining profitability and quality standards. Beyond daily operations, the Executive Chef will support special event culinary execution, ensuring that the property consistently delivers extraordinary dining experiences.

The ideal Executive Chef will have proven experience managing multi-unit or complex culinary operations, preferably in casino, hotel, or resort settings. Job Requirements

  • Proven experience as an Executive Chef or Senior Sous Chef

Job Duties

  • Provide strategic leadership and oversight of all culinary operations across the property
  • Rebuild, mentor, and lead a diverse culinary team focusing on accountability, engagement, and development
  • Ensure consistent execution of quality, presentation, and food standards
  • Oversee menu development, recipe standardization, and seasonal updates
  • Manage labor planning, scheduling, and productivity while maintaining budget controls
  • Maintain strong administrative oversight including food cost, inventory, purchasing, and financial reporting
  • Ensure compliance with food safety, sanitation, health department, and company standards
  • Establish strong kitchen organization systems, workflows, and operational procedures
  • Collaborate with Food & Beverage leadership, HR, Facilities, and Engineering teams
  • Support banquet and special event culinary execution as needed
  • Promote a solutions-oriented mindset focused on continuous improvement
