The Executive Chef role at Legends Global is a critical leadership position within the culinary department, responsible for overseeing all facets of culinary operations in the restaurant located at Sutter Health Park in West Sacramento, CA. Reporting directly to the General Manager, the Executive Chef will direct planning, preparation, production, and control of culinary output, ensuring exceptional food quality, operational efficiency, and compliance with sanitation standards. This role demands strategic management of resources such as time, labor, and materials, paired with the ability to develop innovative recipes and menus that align with the property’s standards. The Executive Chef leads the hiring, training, mentoring, and scheduling of culinary staff, fostering a team-oriented atmosphere with strong emphasis on quality customer service. On the operational front, the Executive Chef ensures that budgetary targets for food, labor, and other expenses are met, while consistently maintaining high kitchen productivity and quality assurance. This leadership role also requires hands-on involvement in sanitation inspections, equipment maintenance, and cross-training initiatives within the department. Candidates for this role need to have a track record of improving kitchen efficiency, cost control, and quality enhancement, supported by at least seven years of executive chef experience in high-volume food industry settings. Flexibility in work hours, including nights, weekends, and holidays, is expected due to business demands. The position offers a competitive salary of up to $115,000, commensurate with experience, along with a generous benefits package including medical, dental, vision, life and disability insurance, paid vacation, and a 401k plan. Job Requirements

  • Minimum seven years of experience as an Executive Chef in a high-volume food industry
  • Must be flexible to work extended hours including late nights, weekends and holidays
  • Knowledge of kitchen sanitation, operation and maintenance of kitchen equipment
  • Experience with P and L and budgeting processes
  • Ability to work in a team environment
  • Excellent leadership and team development skills
  • Must have experience with menu development

Job Qualifications

  • Thorough knowledge of hot, cold food and pastry preparation
  • Extensive skill in using slicers, mixers, grinders, food processors
  • Basic mathematical skills to understand recipes, measurements, requisition amounts, and portion sizes
  • Ability to read, write, and understand English for completing requisitions, reading recipes, and communication
  • Ability to perform duties in confined spaces
  • Minimum seven years of experience as an Executive Chef in a high-volume food industry

  • Ability to work in a team environment
  • Experience in high volume banquet and fine dining

Job Duties

  • Manage and oversee all production, operation, and sanitation aspects of culinary and stewarding operations throughout the property
  • Oversee all culinary employees to achieve budgetary, food quality and customer service expectations
  • Create and develop recipes, dishes, and any additional requirements of the property
  • Manage hiring, scheduling, training, mentoring, and disciplinary actions for all employees
  • Make effective use of resources including time, labor, and materials to maximize productivity
  • Assist in ensuring complete schedules based on forecasting
  • Conduct regular quality assurance and quality control inspections to maintain cleanliness and equipment functionality
  • Maintain food, labor, and other expenses at budgeted levels
  • Communicate and work closely with the General Manager
  • Maintain consistent high levels of food quality, kitchen productivity, and supply chain
  • Ensure team members clean their areas and assist with cleaning in other areas
  • Cross-train department members while supporting and encouraging the team
  • Demonstrate competent product knowledge in storing and handling perishables to maintain quality, security, value, and integrity
  • Perform other duties as assigned
