The Executive Chef role at The Allison Inn & Spa is pivotal in maintaining and advancing the resort's reputation for culinary excellence. Tasked with overseeing all culinary operations spanning the restaurant, banquet services, room service, spa food, and off-site events, this leadership position demands a blend of creativity, business acumen, and hands-on management. The successful candidate will be responsible for ensuring superior food quality, innovating menu development, managing kitchen personnel, directing training programs, overseeing purchasing, and controlling the culinary budget.

Beyond kitchen operations, the Executive Chef plays a strategic role by contributing to operational reporting, forecasting trends, and supporting the Executive Committee in decision-making processes. A commitment to impeccable standards is demonstrated through regular inspections focusing on food preparation, presentation, cleanliness, and employee standards. Collaboration with operations managers further enhances the guest dining experience through thoughtful plate presentation, specialized menus for events, and innovative service area designs.

Job Requirements

  • Minimum of 5 years experience as an Executive Sous Chef or Executive Chef in a multi-venue environment
  • Valid Oregon Food Handler Card
  • Valid Driver's License
  • Pre-employment background investigation including Department of Motor Vehicle check

Job Qualifications

  • Competencies include strategic thinking, business acumen, thoroughness, leadership, communication proficiency, presentation skills
  • Supervisory responsibility experience
  • Valid Oregon Food Handler Card
  • Valid Driver's License

Job Duties

  • Oversee all culinary activities for the restaurant, banquets, room service, spa food and off-site events
  • Make periodic and regular inspections of units to observe quality of food preparation and service, food appearance, and cleanliness and sanitation of production and service areas, equipment and employee appearance
  • Coordinate all training activities for kitchen, bakery, butcher shop and other production and service employees, including identification and analysis of training needs and design and implementation of programs to address deficiencies
  • Develop recipes and portion specifications in accordance with consumer tastes, nutritional needs, product specifications, ease of preparation and budgetary constraints
  • Participate in menu planning activities including determination of purchasing specifications, product and recipe testing and menu development
  • Assist operation managers in areas such as plate presentation, special function menu planning and design of new service areas
  • Prepare operational reports and analyses setting forth progress and adverse trends and make appropriate recommendations and forecasting
  • Participate actively with the Executive Committee functions
  • Represent The Allison at community events, marketing functions and public relations opportunities
  • Perform other related duties incidental to the work described herein
