The Executive Chef position at Bob's Steak and Chop House, located within the Omni Oklahoma City Hotel, is a key leadership role responsible for managing the kitchen and food production operations efficiently while maintaining strict cost control. This role requires the oversight of daily food preparation activities to ensure the highest culinary standards consistent with Bob's Steak and Chop House's established policies and procedures. Working closely with the General Manager and Food and Beverage Director, the Executive Chef plays a vital role in budgeting, menu development, staff management, and the overall guest dining experience.

This position demands a strong leader who is adept at motivating and developing kitchen staff, maintaining control over purchasing and inventory, and applying market analysis to adjust food offerings accordingly. The Executive Chef will be involved in menu planning and designing daily specials, adhering to health and safety regulations, overseeing equipment maintenance, and participating in sales promotions like culinary festivals and competitions. Candidates should possess a deep understanding of industry trends and competitor offerings, ensuring that Bob's Steak and Chop House remains at the forefront of fine dining in the region.

Successful candidates must demonstrate excellent communication skills, ability to multitask in a fast-paced setting, and proficiency with payroll and scheduling management. Experience in high-volume, fine dining restaurant operations, preferably steakhouses, is critical, along with culinary certifications such as Management ServSafe. The role requires the physical ability to handle kitchen activities involving lifting, carrying, and standing for extended periods.

Job Requirements

  • High school diploma or equivalent
  • Minimum 4 years culinary management experience
  • Proven leadership and culinary skills
  • Ability to train and motivate staff
  • Knowledge of health and safety regulations

Job Duties

  • Assist the General Manager in budgeting food cost and payroll
  • Control overheads and achieve food cost budget
  • Adhere to Bob’s Steak and Chop House Standard Recipes
  • Work with Food and Beverage Director on capital expenditures
  • Ensure smooth running of daily kitchen operations
  • Maintain standards for purchasing and receiving items
  • Create recipes and production methods
  • Inspect food service sections during service
  • Control equipment and schedule maintenance
  • Stay updated on market trends and competitor offerings
  • Promote in-house sales activities
  • Manage food production staff and scheduling
  • Recruit and train kitchen staff
  • Ensure compliance with employment legislation
  • Establish office procedures for menus and correspondence
  • Participate in department meetings
