The role of the Executive Chef at Morrison Healthcare offers an exciting opportunity for culinary professionals who are dynamic, entrepreneurial, and passionate about leading kitchen operations in a healthcare setting. This position is responsible for overseeing all aspects of kitchen management while ensuring compliance with safety and sanitation standards. The Executive Chef will prepare and direct meal preparation in accordance with corporate guidelines, designing menus that are both nutritious and appealing. Leaders in this role will have a hands-on approach to training kitchen staff on food preparation, handling, and the use of equipment, instilling best practices in food safety and sanitation. The role requires a deep understanding of food cost control, quality assurance, and efficient inventory management. The Executive Chef must also maintain cleaning and maintenance schedules essential for kitchen operations and be capable of managing leftover food to minimize waste in compliance with company policies. This position offers a salary range of $75,000 to $85,000 and is well-suited for culinary professionals with significant experience in complex foodservice operations, catering, and institutional cooking. Job Requirements
- Education equivalent to A.S. degree or relevant experience
- minimum 5 years culinary/kitchen management experience
- strong knowledge of food safety and sanitation standards
- excellent leadership and communication skills
- ability to manage inventory and control food costs
- capability to train and supervise kitchen staff
- proficiency in computer applications including Microsoft Office
- willingness to participate in client satisfaction programs
- ServSafe certification preferred
Job Qualifications
- A.S. or equivalent experience
- 5+ years of progressive culinary/kitchen management experience depending on formal degree or training
- extensive catering experience preferred
- experience in high volume, complex foodservice operations
- institutional and batch cooking experience
- hands-on chef experience
- comprehensive knowledge of food and catering trends
- proficiency with Microsoft Office, Outlook, email, and Internet
- ServSafe certification highly desirable
Job Duties
- Plan regular and modified menus according to established guidelines
- follow standardized recipes, portioning, and presentation standards
- complete and utilize daily production worksheets and waste log sheets
- taste completed meals to ensure quality
- train kitchen staff in food preparation, safe handling, operation of equipment, food safety, and sanitation
- establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas
- ensure compliance with federal, state, and local health and sanitation regulations and department sanitation procedures
