Established as a pioneer in the catering industry, the company has expanded its expertise into Sports and Entertainment Food and Beverage Services, offering elevated concessions and premium culinary offerings. Proof of the Pudding has recently partnered with the Joliet Slammers, marking a significant venture in providing premier hospitality and culinary services at stadium events. They are seeking an Executive Chef to oversee the entire culinary program for the stadium. This role plays a vital part in managing and elevating both the premium hospitality and concession services during sporting events, concerts, catering functions, and various special events. The Executive Chef will be responsible for providing hands-on leadership to ensure the kitchen operates seamlessly and maintains the highest standard of food quality, presentation, and guest satisfaction.

In addition to culinary supervision, the Executive Chef is tasked with balancing revenue maximization and expense control to meet venue financial objectives. They will work closely with the General Manager to understand event specifics, including detailed menu planning, setup logistics, and other event requirements. The position emphasizes the importance of collaboration and effective communication across teams to consistently deliver an outstanding guest experience.

Key responsibilities include planning and executing game-day and event-specific menus, ensuring strict compliance with sanitation, safety, and security standards, and overseeing purchasing and inventory management for all culinary operations. The Executive Chef will also be involved in budget preparation, forecasting, and financial reporting including labor versus sales analysis and invoice tracking.

This role demands strong leadership skills to train, schedule, and hold accountable the culinary staff while fostering a team-oriented work environment. The Executive Chef is expected to lead by example, mentor junior staff, and create a culture of continuous improvement and enthusiasm within the culinary team. Additional duties include developing creative menu items adhering to Proof of the Pudding’s standard of innovation, maintaining positive client relationships, and ensuring consistent product quality during high-volume service periods.

The Executive Chef position is based onsite at the venue during events and involves dynamic, physical work including standing, moving throughout the kitchen and venue, and performing tasks such as lifting up to 30 pounds. This full-time role offers a competitive salary range of $65,000 to $75,000 per year plus potential bonuses, along with comprehensive benefits like health insurance, dental, vision, life insurance, 401k, disability coverage, cell phone reimbursement, and Health Savings Account opportunities. Job Requirements

Job Duties

  • Plan and execute game-day and event menus
  • maintain a safe, secure, and healthy environment by establishing, following, and enforcing sanitation standards and procedures
  • comply with legal regulations

  • manage and work very closely with General Manager to fully understand event details including custom menus, event set up, and event specifics
  • responsible for all culinary aspects of gameday food service areas
  • total execution of events and food service while maintaining the highest level of food quality and presentation
  • purchasing and inventory management for all culinary operations
  • meet venue financial objectives by forecasting requirements, preparing an annual budget, scheduling expenditures, analyzing variances, initiating corrective actions
  • create weekly financial reporting including declining balance, invoice tracking and labor vs. sales reports
  • develop, implement, and communicate creative menu items that adhere to the Proof of the Pudding standard of innovation and excellence
  • manage financial goals and food cost while maintaining and tracking the venue’s budget
  • responsible for training, accountability, and scheduling of the culinary staff
  • lead and coach culinary department to develop a strong and growing team
  • perform other related duties as needed
