Job Duties
- Lead culinary operations for one of the largest sporting venues in the world
- Collaborate with Aramark's elite network of chefs who fly in to support during peak season
- Oversee diverse food programs including suites, catering tents, press dining, and concessions
- Ensure culinary production aligns with the Executional Framework
- Maintain culinary standards and techniques for food preparation, production, presentation, and service
- Manage culinary team including chef managers and hourly staff to ensure quality in food presentation
- Train and manage culinary and kitchen employees in best food production techniques
- Coach employees by creating shared goals and methods
- Reward and recognize employees
- Plan and execute team meetings and daily huddles
- Complete and maintain staff records, training records, and performance data
- Develop and maintain effective client and guest relationships
- Interact directly with guests daily
- Aggregate and communicate regional culinary and ingredient trends
- Deliver food and labor targets consistently
- Focus on margin improvement using performance metrics and data analysis
- Ensure efficient execution and delivery of culinary products as per daily menu
- Maintain integrity of Aramark food quality and safety standards
- Comply with Operational Excellence fundamentals including waste management, standard menus, recipes, and ingredients
- Understand and manage supply chain and procurement ensuring authorized suppliers are used
- Implement the Food Framework fully
- Ensure accurate food consumption estimates for requisitions and purchases
- Manage proper equipment operation and maintenance
- Ensure compliance with Aramark SAFE food and Quality Assurance standards and safety policies
- Comply with all applicable policies including safety, health, wage, and hour regulations
