The Executive Chef II position at the University of Pittsburgh's Peterson Center is a key leadership role within Chartwells Higher Education’s dining services. This is a full-time position with a competitive salary range of $60,000 to $70,000, and it reports directly to the Director of Dining Services. The Executive Chef II is responsible for spearheading culinary innovation, menu development, and preparation within a high-volume, fast-paced campus environment. This role requires a blend of creativity, technical skill, and management expertise to ensure exceptional food quality and customer satisfaction. The Executive Chef II will oversee budgeting, food costing, and inventory, ensuring cost-effective operations while maintaining exceptional culinary standards. Furthermore, they will mentor and supervise a team of chefs, cooks, and culinary staff, fostering professional growth and adherence to health and safety regulations.

Job Requirements

  • Associate degree or equivalent experience
  • Minimum three years of culinary or kitchen management experience
  • Experience in high-volume foodservice operations
  • Computer proficiency
  • ServSafe certification

  • A.S. degree or equivalent experience
  • Three or more years of progressive culinary or kitchen management experience
  • Experience in high-volume, hands-on foodservice operations
  • Must be experienced with computers
  • ServSafe certified

Job Duties

  • Plan regular and modified menus according to established guidelines, follows standardized recipes, portioning and presentation standards
  • Complete and apply daily production worksheets and waste log sheets
  • Supervise and mentor chefs, cooks, and other team members on food preparation, safe handling, equipment operation, and sanitation practices
  • Ensure the implementation of culinary standards, including recipe compliance and food quality
  • Lead inventory of food and non-food supplies, maintaining compliance with established guidelines while ensuring necessary products are available when needed
  • Enforce federal, state, and local health and sanitation regulations and department procedures
  • Forecast annual food and labor costs and supervise actual financial results
  • Foster strong client relationships to align programs with objectives, driving satisfaction and retention
  • Perform other duties as assigned to support the efficient functioning of dining service operations
