Currently, Fresh Ideas is seeking an energetic and growth-minded Executive Chef to oversee kitchen operations at Maryville College campus. The Executive Chef will be responsible for maintaining a safe and sanitary work environment for all kitchen staff while ensuring quality meal preparation aligned with corporate programs and guidelines. This role demands strong leadership, culinary expertise, and a proactive approach to menu planning, food safety, and inventory management.

In this position, the Executive Chef will plan and implement regular and modified menus that meet established guidelines while following standardized recipes and maintaining portion control and presentation standards. The role involves training kitchen staff on food preparation, safe handling, equipment operation, and sanitation standards consistent with company policies and regulatory requirements. The Executive Chef will oversee inventory management to balance availability with cost controls and ensure proper sanitation and maintenance schedules are adhered to throughout kitchen operations.
A commitment to food quality and safety is essential, with responsibility for complying with federal, state, and local health regulations as verified by audits. The Executive Chef will play a key role in seasonal planning, quality assurance, and team development through participation in departmental meetings and professional programs. Job Requirements
- Associate degree or equivalent experience
- Minimum 5 years of culinary or kitchen management experience
- Experience training and leading kitchen staff
- Ability to develop menus and follow standardized recipes
- Strong knowledge of food safety and sanitation regulations
- Effective inventory and waste management skills
- Computer proficiency including Microsoft Office applications
- Strong communication and leadership skills
- Ability to maintain compliance with health department regulations
- Willingness to engage in client satisfaction programs
- ServSafe certification preferred
Job Qualifications
- A.S. or equivalent experience
- 5+ years of progressive culinary/kitchen management experience depending upon formal degree or training
- Extensive catering experience is a plus
- High volume, complex foodservice operations experience is highly desirable
- Institutional and batch cooking experiences
- Hands-on chef experience is a must
- Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
- Experienced with computers including Microsoft Office (Word, Excel, PowerPoint), Outlook, E-mail and the Internet
- Willing to participate in client satisfaction programs/activities
- ServSafe certified is highly desirable
Job Duties
- Plan regular and modified menus according to established guidelines
- Follow standardized recipes, portioning and presentation standards
- Complete and utilize daily production worksheets and waste log sheets
- Taste completed meals to ensure quality
- Train kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation based on Company and regulatory standards
- Establish and maintain cleaning and maintenance schedules for equipment, storage and work areas
- Maintain inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed
- Make all decisions regarding utilization of leftover food products staying within Company guidelines
- Comply with federal, state and local health and sanitation regulations and department sanitation procedures as evidenced through local health department and third-party audits
- Follow facility, department, and Company safety policies and procedures including occurrence reporting
- Participate and attend departmental meetings, staff development, and professional programs as appropriate
