The Executive Chef position at Boeing Center, managed under Legends Global, offers a critical leadership role within the Food and Beverage department. This salaried, exempt role reports directly to the Director of Food and Beverage and involves comprehensive oversight of all kitchen operations. The Executive Chef is responsible for purchasing, receiving, and preparing all food items while maintaining high standards of quality and safety. Key responsibilities include supervising kitchen and stewarding staff, managing culinary equipment maintenance, and ensuring compliance with health and safety regulations. This role requires strong leadership abilities to manage team dynamics effectively, including hiring, training, performance review, and conflict resolution.

Job Requirements

  • Minimum of eight years culinary experience in banquet, hotel, private club, or convention center
  • proven leadership experience managing kitchen personnel
  • ability to maintain food safety and sanitation standards
  • strong communication and interpersonal skills
  • capability in menu development and food cost management
  • proficient in using hospitality industry software
  • ServeSafe certification required
  • capacity to stand for long hours and perform physical tasks
  • flexibility to work inside and outside facility as events require

Job Qualifications

Job Duties

  • Ordering, receiving, and preparing all food items
  • maintaining food costs and budget goals
  • producing required product according to banquet event orders for each event
  • developing proposals for potential clients, including tastings on larger plated events
  • entertaining prospective clients through chef's tastings
  • reporting daily event costs to the Food & Beverage Director
  • maintaining an active role in local hospitality community and professional associations
  • attending event-related meetings and communicating changes with other departments
  • developing and costing menus for banquets, concessions and other projects
  • maintaining all kitchen equipment cleanliness and annual maintenance
  • participating in promotional media events to promote the facility
  • hiring and training all kitchen and stewarding staff in 'ServeSafe' and health department regulations
  • managing culinary and stewarding personnel to meet labor and production objectives
  • overseeing retail production and deliverability
  • maintaining a Health Department score of 90 or higher
  • daily communication with Director of Food & Beverage and staff
  • supervising all kitchen personnel in accordance with company policies and applicable laws
