The Executive Chef role at MGM Grand's Avenue Cafe is a prestigious position where culinary creativity meets operational expertise in one of the most vibrant settings on the Las Vegas Strip. This full-time position demands a visionary leader who can drive the culinary team toward excellence, innovation, and guest satisfaction. The Executive Chef will be responsible for overseeing all kitchen operations, including financial management, staff leadership, menu development, and maintaining the highest standards for food quality and sanitation. Moreover, the Executive Chef will collaborate closely with divisional directors, other executive chefs, and kitchen teams to synchronize efforts across various culinary venues, ensuring consistent execution of recipes, adherence to time standards, and exceptional quality in every meal. Job Requirements
- Bachelor's degree or relevant experience in a related field
- 2+ years of relevant experience working in a culinary environment as a chef
- Previous experience managing employees under a collective bargaining agreement preferred
- Previous experience in a banquet kitchen or high-volume restaurant or luxury or fine-dining restaurant preferred
- Ability to oversee kitchen operations and manage staff
- Strong leadership and communication skills
- Knowledge of health and sanitation standards
- Ability to collaborate with internal and external stakeholders
Job Qualifications
- Bachelor's degree or relevant experience in a related field
- 2+ years of prior relevant experience working in a Culinary environment as a Chef
- Previous experience managing employees under a collective bargaining agreement preferred
- Previous experience working in a banquet kitchen or high-volume restaurant preferred
- Experience in a luxury or fine-dining restaurant preferred
Job Duties
- Owns, leads and oversees daily kitchen operations, fiscal budgets, labor productivity, scheduling, inventory control, guest service standards, and execution and development of menu strategies
- Represent the kitchens in divisional, property or corporate meetings
- Responsible for execution of policies, operating procedures, pricing initiatives, training programs, directives, menus, rules and regulations for the commissary staff
- Maintain the highest standards of health, sanitation and cleanliness within all areas of the kitchens
- Manages Human Resources responsibilities for commissary kitchens including creating a work environment that promotes teamwork, performance feedback, recognition, mutual respect and employee satisfaction
- Interacts with internal/external guests to ensure satisfaction and product quality
- Collaborate with divisional Directors, Executive Chefs, and kitchen team to ensure seamless execution of product delivery including time standards, recipe specifications, and quality
- Maintains excellent knowledge of property’s food & beverage products, menu items and equipment
