Job Description
SkyChefs has been a leader in culinary excellence within the airline industry since 1942. We are currently seeking an Executive Chef to spearhead our dynamic culinary operation near Austin Bergstrom International Airport. This role is integral to managing a large-scale kitchen that caters daily to thousands of travelers through global airline partnerships. The Austin kitchen is a vast and bustling workspace, staffed with approximately 180 employees, supporting around 85 commercial airline flights each day. Operating 24 hours a day, seven days a week, year-round, this position demands an individual with seasoned expertise in culinary leadership who is passionate about operational excellence, consistency in food quality, and effective team management.
This Executive Chef position stands apart from typical restaurant roles. It focuses on precision and consistency in food production, the optimization of processes for maximum efficiency, adherence to strict food safety and compliance standards, and the development of culinary teams that embody leadership and innovation. The successful candidate will thrive in an environment that values system creation, large-scale quality assurance, and the navigation of the unique challenges presented by international food operations. Flexibility is essential as this role requires working hours primarily Monday through Friday from 5 AM to 1:30 PM, with additional requirements to cover early mornings, evenings, weekends, and holidays when necessary.
The role encompasses overseeing all food production activities, maintaining inventory control, ensuring strict compliance with recipe specifications, contributing product and menu innovation aligned with current trends, and managing budgets effectively. Cost control extends through staff management and materials procurement. Training and communication are also key, ensuring that the kitchen staff is well-prepared and that stakeholders are kept informed. Quality assurance involves inspection of incoming goods, maintaining high hygiene standards, and rigorous compliance with all health and safety regulations.
Leadership responsibilities include organizing and directing all kitchen operations, motivating and developing team members to uphold company values, and taking corrective actions as needed to meet budgetary goals. A deep knowledge of food safety regulations such as HACCP, budgeting, food cost control, and labor management are essential to succeed. Bilingual proficiency in English and Spanish is highly preferred to enhance communication across a diverse team. Job Requirements
- 5-7 years of progressive cooking experience with minimum 2 years in supervisory role
- formal culinary certification or equivalent apprenticeship preferred
- knowledge of food safety regulations including HACCP
- experience in budgeting and cost control
- effective leadership and team management skills
- ability to work flexible hours including early mornings, evenings, weekends, and holidays
- bilingual proficiency in English and Spanish preferred
Job Qualifications
- 5-7 years of progressive cooking experience with at least 2 years in a supervisory role
- preferred culinary school apprenticeship or formal certification in professional cooking techniques
- comprehensive knowledge of food safety and regulatory compliance, including HACCP
- strong expertise in budgeting, food cost control, and labor management
- bilingual proficiency (English/Spanish) is highly preferred to foster effective team communication
