The Campus Segment of Sodexo is currently seeking an Executive Chef 2 to join the team supporting the dynamic and expanding dining program at Central Connecticut State University (CCSU). CCSU is home to over 10,000 students and offers a diverse culinary landscape spanning multiple venues such as Memorial Hall Café, the recently opened Hilltop Café, Starbucks, numerous retail outlets, and the innovative dining concept, ZIME. This leadership role is essential for driving culinary excellence across both residential and retail dining operations, directly impacting the daily dining experience of students, faculty, and staff.
As the Executive Chef 2, you will lead and oversee the daily culinary operations of multiple campus dining venues, ensuring that every dish meets the highest standards of quality and presentation. You will be responsible for executing menus, adhering to recipes, planning production, and maintaining exceptional food safety and sanitation standards consistent with HACCP requirements. Your role will include managing inventory, ordering supplies, forecasting needs, and controlling food costs to align with budgetary goals.
This position requires hands-on leadership in a fast-paced, high-volume environment. You will model best practices in culinary techniques and kitchen management while fostering a positive, inclusive, and collaborative culture among kitchen staff. Training and mentoring team members is a key part of the role, as is partnering closely with campus leadership to enhance overall customer satisfaction and elevate the student dining experience.
In addition to culinary duties, you will manage labor scheduling, payroll processing, and assist with operational planning for back-of-house teams. Collaboration with front-of-house staff is vital to support seamless service across residential dining, retail, and catering operations. You will also play an active role in introducing new dining concepts, seasonal menu changes, and culinary innovations that keep campus dining vibrant and responsive to student preferences.
Working with unionized staff requires navigating collective bargaining agreements and maintaining positive labor relations, which is a critical component of this role. Job Requirements
- Associate degree or equivalent experience
- Minimum two years management experience
- Minimum two years work experience in food or culinary services including restaurants fast food vending catering institutional services or mall food courts
- Proven ability to lead and develop kitchen staff
- Excellent communication and organizational skills
- Ability to work in fast-paced high-volume environments
- Knowledge of food safety hygiene and HACCP standards
- Experience managing inventory ordering and food cost control
Job Qualifications
- Proven experience as an Executive Chef or senior culinary leader in high-volume dining (campus, corporate, healthcare, or hospitality)
- Strong culinary foundation with excellent cooking, production, and menu development skills
- Exceptional organizational and communication skills, with the ability to manage multiple priorities
- A commitment to food quality, safety, sustainability, and student-centered service
- Ability to innovate, adapt, and thrive in a dynamic, fast-paced environment
- Proficiency with administrative and operational responsibilities including ordering, inventory, budgeting, and payroll oversight
- A passion for delivering an outstanding dining experience and maintaining strong client relationships
- Minimum Education Requirement - Associate's Degree or equivalent experience
- Minimum Management Experience - 2 years
- Minimum Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc
