The role of the Resort Executive Chef at Crystal Mountain Resort is pivotal to delivering a high standard of culinary excellence that matches the resort's reputation. Reporting directly to the Director of Food & Beverage and overseeing the resort culinary teams, the Executive Chef leads all culinary and stewarding operations across multiple year-round and seasonal dining venues. This senior leadership position requires a dynamic individual responsible for elevating the guest experience through exceptional food quality, innovative menu strategies, and rigorous food safety standards. The executive chef is instrumental in managing labor, controlling costs, and fostering culinary talent development to maintain operational excellence while ensuring financial success. Collaboration is essential, partnering closely with the Food & Beverage leadership team to consistently deliver innovative, high-volume dining services. This includes supervising kitchen cleanliness, inventory management, and compliance with food safety regulations, particularly the Tacoma-Pierce County Health Department (TCPHD) standards.

Recognizing the impact of a motivated and well-managed culinary team, the Executive Chef provides training, coaching, and development opportunities for kitchen staff and outlet chefs. They also design culinary policies and procedures that reflect best practices and the latest techniques, supporting the overall strategic goals of the resort. The position demands a proactive leader who excel at problem-solving, team building, and high-volume kitchen operations, emphasizing accountability and continuous professional growth. Job Requirements

  • Ability to ski or snowboard at intermediate level
  • Willingness to work evenings, weekends and holidays
  • Able to lift and move at least 20 pounds occasionally
  • Manual dexterity to operate computer and office equipment
  • Good auditory and visual ability for communication and equipment operation
  • Ability to work extended periods sitting, bending, reaching and speaking
  • Ability to work extended periods standing, walking, kneeling, pushing and pulling
  • Ability to satisfactorily perform all essential duties
  • Culinary degree preferred
  • Minimum 10 years culinary experience with 4 years in executive chef role
  • Proficient with kitchen and safety equipment
  • Knowledge of local TCPHD regulations
  • Skilled in MS Office and food costing software
  • Excellent team management skills
  • Strong problem-solving abilities

Job Qualifications

  • Degree in culinary arts, food production, hotel or restaurant management preferred
  • Minimum 10 years of culinary experience with at least 4 years as an Executive Chef
  • Proven leadership and team-building skills
  • Skilled in kitchen and safety equipment use
  • Proficient in MS Office suite including Excel and Teams
  • Knowledgeable with food costing and recipe software like FoodTrak or Craftable
  • Understanding of PMIX and sales reports and P&L statements
  • Demonstrated ability to manage high-volume kitchen operations
  • Strong organizational and dependability skills
  • Professional demeanor and ability to produce high-quality work efficiently

Job Duties

  • Ensure great guest service through consistent execution of all menus and recipes, training and accountability of the culinary team
  • Train and manage all culinary and stewarding personnel
  • Review, evaluate, and coach all kitchen personnel including regular staff meetings
  • Coach and support Executive Sous Chef with daily kitchen operations ensuring high-quality product and minimal waste
  • Oversee preparation, execution, and collaborate on design of all menus including banquets and daily specials
  • Lead culinary and food safety at food festivals and special culinary events
  • Ensure efficient preparation and presentation of all food items to agreed specifications
  • Maintain cleanliness and good working order of kitchens and storage areas complying with food safety standards
  • Maintain strict quality control on all food items
  • Manage food inventory through strategic ordering and vendor relationships with approved suppliers
  • Complete and verify all food and beverage related documentation using software such as Excel and FoodTrak
  • Maintain productivity and efficiency of kitchen staff including scheduling and labor cost management
  • Keep food cost in line with budget while maintaining strategic product mix
  • Oversee training of Line Cooks and assist on the line as needed
  • Ensure compliance with safety and health standards as required by law
  • Develop and update culinary policies and procedures in collaboration with Food & Beverage leadership
  • Establish and maintain cleaning and maintenance schedules for kitchen areas
  • Provide training and professional development opportunities for outlet chefs
  • Facilitate staff participation in service lineups and meetings
  • Maintain all safety standards, including MSDS logs and safety data compliance
  • Attend senior-level resort meetings as required by the Director of Food & Beverage
  • Perform other duties as directed
