Job Requirements
- Degree or certificate in culinary arts
- One to two years experience as an executive chef
- Ability to lead and train kitchen staff
- Knowledge of food safety, sanitation and OSHA standards
- Strong organizational and communication skills
- Ability to work varied schedule including holidays and weekends
- Physical ability to stand for long periods and lift up to 50 pounds
Job Qualifications
- Degree or certificate in Culinary Arts
- One to two years experience as an executive chef
- Expertise in food product, presentation, quality and preparation
- Skilled in menu concept and design
Job Duties
- Interview, select, train, schedule, coach and support associates
- Establish priorities and assign production and preparation tasks to staff
- Review daily menu specials, banquet event orders and inventory food items
- Requisition day’s supplies and ensure proper receipt and storage
- Ensure quality of products received
- Meet with Executive Steward to review equipment needs and sanitation
- Ensure kitchen work areas are stocked with tools, supplies, and updated recipe cards
- Ensure menu items are prepared according to recipes and standards
- Develop new menu items, test and write recipes
- Observe guest reactions and confer with service staff for guest satisfaction
- Conduct frequent kitchen walk-throughs and address deficiencies
- Assist catering department in developing special menus and client meetings
- Review sales and food costs daily and manage inventory use
- Prepare weekly work schedules in alignment with labor forecasts
- Follow sustainability guidelines in the EarthView program
- Practice safe work habits and adhere to OSHA standards
- Perform other duties as requested by management
