The position of Executive Chef at CoralTree is a vital leadership role responsible for directing and overseeing all food service operations across the property. This role involves leadership in creative development and quality assurance in culinary operations, which includes directing product conceptualization, menu engineering, recipe development, item costing, concept testing, product specification development and sourcing, new menu implementation, and ongoing quality assurance processes and systems. The Executive Chef provides visionary leadership for culinary research and development, creating innovative product offerings suitable for various venues such as main dining rooms, buffets, room service, specialty restaurants, banquets, catering, and themed or special events.
This role requires an individual capable of formulating and implementing procedural guidelines, policies, and standards that encompass menu design, product specifications, cleanliness and sanitation, as well as controlling food, labor, and operating expenses. The Executive Chef must stay abreast of industry trends and work closely with internal teams and external partners on culinary research and development projects. Managing the creation of menus, preparation instructions, and detailed dish specifications is critical, as is collaborating with the Purchasing department for sourcing required products. The role also includes developing standards, processes, and tools to ensure consistent culinary quality at CoralTree properties, guiding culinary teams to maintain corporate standards and systems, and monitoring guest and employee feedback to maintain the highest level of guest satisfaction.
Additionally, the Executive Chef is responsible for partnering with Food & Beverage management to develop and administer formal quality assurance processes, including conducting audits, secret shopper programs, culinary focus groups, consumer tastings, and customer/operator surveys. This position demands a leader with extensive experience in multi-property culinary management and a strong capacity for team building and training. A successful candidate will have a proven track record in the luxury hospitality sector, specifically in 4 or 5-star environments, and must possess excellent verbal and written communication skills, as well as the ability to create and implement innovative and successful new culinary concepts.
