This position is based at the JW Marriott located at 400 Renaissance Center, Detroit, Michigan. It is a full-time management role within the Food and Beverage and Culinary category, with a competitive annual salary range of $124,232 to $164,000 and eligibility for bonuses. The role focuses on overseeing all kitchen operations, ensuring high-quality culinary outputs, and fostering both guest and employee satisfaction. The successful candidate will demonstrate both a strong culinary skill set and leadership capability, managing a team and guiding operations across multiple food preparation and service areas, including banquets, restaurants, room service, bars, lounges, and employee cafeterias.
The primary responsibility of this role is to guarantee the smooth and efficient functioning of daily kitchen operations. It involves hands-on culinary involvement while leading the kitchen management team to maintain excellent food quality and service standards. The person in this role is expected to supervise all kitchen and supporting functions like purchasing and dish-room management, enforce food safety and sanitation compliance, and manage costs related to food, supplies, and equipment. Beyond operational oversight, the role includes strategic goal setting for the culinary department, including establishing performance benchmarks, budget goals, and team objectives that align with the brand’s standards and the property’s financial objectives.
In addition to operational and strategic management, this role demands a strong focus on people leadership and development. The candidate will be responsible for training staff on cooking techniques, food presentation, menu development, and service excellence. They will also administer performance appraisals, coach staff to improve skills and knowledge, and foster a work environment that encourages mutual respect, employee feedback, and open communication. Addressing employee concerns and ensuring consistent application of policies and procedures also fall under the manager’s responsibilities.
Superior customer service is a cornerstone of this role. The manager must direct and encourage service behaviors that exceed guest expectations, handle guest complaints constructively, and use feedback data to identify areas for service improvement. Job Requirements
- High school diploma or GED
- six years of experience in culinary, food and beverage, or related professional area
- or two-year degree from accredited university in Culinary Arts, Hotel and Restaurant Management or related major
- four years of relevant professional experience
- leadership and communication skills
- knowledge of food safety and sanitation
- ability to manage multiple food preparation areas
