The Executive Chef role at One40 Rooftop is a pivotal leadership position designed for a visionary culinary professional who will shape and drive the restaurant’s kitchen operations and culinary identity. Reporting directly to ownership and collaborating closely with the Director of Operations and Front of House leadership, the Executive Chef will be responsible for devising and executing seasonal menus that reflect the restaurant’s core values and commitment to excellence. This includes the development of tasting menus, prix-fixe options, holiday specials, and chef-led culinary experiences that captivate guests and uphold the restaurant’s high-end presentation standards.

Beyond culinary creativity, the Executive Chef will oversee all daily kitchen operations, ensuring seamless and efficient service, stringent adherence to food safety and sanitation regulations, and impeccable kitchen organization. This leader will recruit, train, mentor, and retain a high-performing culinary team, cultivating a professional and respectful environment that emphasizes collaboration and continuous improvement.

Financial stewardship is a critical component of the role, with responsibilities encompassing food cost management, inventory control, monitoring vendor relationships, and ensuring accurate recipe costing and portioning. Job Duties

  • Lead creation and execution of seasonal Modern American menus aligned with One40’s philosophy
  • Curate tasting menus, prix-fixe offerings, holiday menus, and chef-led experiences
  • Ensure dishes reflect high-end presentation, balanced flavor, and consistency
  • Oversee daily kitchen operations, ensuring smooth, organized service at all times
  • Maintain exceptional food quality, cleanliness, and kitchen organization
  • Uphold DOH compliance, food safety, and sanitation standards
  • Recruit, train, mentor, and retain a strong, accountable culinary team
  • Foster a professional, collaborative, and respectful kitchen culture
  • Conduct evaluations, provide feedback, and manage performance expectations
  • Manage food cost, COGS targets, inventory, waste control, and vendor relationships
  • Ensure accurate recipe costing, portioning, and inventory systems
  • Work closely with ownership and the Director of Operations on budgeting and forecasting
  • Partner with FOH leadership to ensure unified guest experience flows
  • Communicate clearly with the DO and ownership on updates, challenges, and progress
  • Attend management meetings, contribute to strategic planning, and support special events
