The role of Executive Chef at Granite State Gaming & Hospitality is a pivotal leadership position responsible for managing all aspects of back-of-house kitchen operations. This includes overseeing food production to ensure the highest quality, maintaining consistency in recipes, and enforcing stringent food safety protocols. The Executive Chef will lead a team of kitchen staff, managing recruitment, training, and performance to uphold operational excellence. Cost control is a critical component of the role, requiring effective scheduling, inventory management, and order approvals to optimize food and labor expenses. This position also involves collaboration with marketing and operations teams to innovate menus and enhance the dining experience for guests.

Job Requirements
- Must be able to lift up to 50 lbs. and work in environments with heat, noise, and secondhand smoke
- Flexible schedule required, including nights, weekends, and holidays
Job Qualifications
- Minimum 5 years' kitchen supervisory experience in high-volume restaurants
- High school diploma or equivalent
- Culinary certifications preferred
- Current ServSafe Food Manager, Allergen, and Chokesaver certifications
- Strong leadership, communication, and problem-solving skills
- Ability to manage multiple priorities in a fast-paced environment
- Organizational skills and attention to detail
Job Duties
- Hire, train, and manage kitchen staff to meet operational and quality standards
- Oversee daily kitchen production and maintain recipe consistency
- Monitor food quality, cleanliness, organization, and safety
- Control food and labor costs through effective scheduling and ordering
- Approve invoices, manage inventory, and implement new menus
- Conduct training sessions, food demonstrations, and performance reviews
- Collaborate with marketing and operations teams to enhance menu creativity
- Maintain strong communication with leadership and foster a positive team environment
