This position is a leadership role within Eddie Merlot's kitchen environment, tasked with managing and directing all aspects of kitchen operations to align with the brand's mission and vision. The role focuses heavily on maintaining a safe, profitable, and efficient kitchen while ensuring that every dish served meets the highest standards for food quality, presentation, and guest satisfaction. This involves overseeing food production for both the restaurant’s daily menu and special functions such as banquets and private events.
The successful candidate will take accountability for hiring, training, and coaching kitchen staff, including Sous Chefs, while fostering a collaborative and growth-oriented environment that supports ongoing team development and succession planning. Financial responsibilities play a key part in the role, with an emphasis on monitoring sales, costs, and budget preparation to secure profitability without compromising brand integrity.
The kitchen leadership must uphold stringent health, safety, and sanitation standards, ensuring compliance with state, federal, and local regulations. Additionally, this role requires collaboration with other senior chefs and corporate leaders to innovate menu options, improve recipes, and maintain excellent vendor relationships. The ideal leader will be an active participant in the restaurant's leadership team, promoting teamwork between the back of the house and front of the house to enhance the overall guest experience.

Job Requirements
- High school diploma or equivalent
- Previous experience in a supervisory role within a kitchen environment
- Knowledge of OSHA and food safety regulations
- Ability to lead, train, and develop kitchen staff
- Strong organizational and multitasking skills
- Ability to work flexible hours including evenings and weekends
- Basic computer skills for administrative tasks
- Physical capability to stand for extended periods
- Attention to detail and commitment to quality
Job Qualifications
- Proven experience in kitchen management or culinary leadership
- Strong knowledge of food safety and sanitation regulations
- Excellent leadership and coaching skills
- Ability to manage budgets and control costs

- Culinary degree or relevant certification preferred
Job Duties
- Lead, direct, coach and teach the Sous Chef and kitchen and food production team
- recruit, hire, and ensure proper training of team members, using approved company training materials and certified coaches
- communicate job expectations and standards, review job performance, coach and hold team members accountable
- prepare and review daily production list ensuring it reflects PMIX, recent sales trends and Private Dining events
- conduct daily line checks ensuring proper hold temperatures, line levels, portion sizes, quality, freshness and flavor profiles meet company standards
- direct food preparation for meals, banquets, and special events following established recipes and quality standards
- ensure compliance with health and consumer protection regulations regarding food preparation, handling, storage, and safety
- deliver expected financial results while maintaining brand integrity
- assist in preparing annual Back of the House budget for food, equipment, supplies, and labor
- monitor sales, food and labor costs and related financial data regularly
- perform administrative and reporting tasks related to cost control
- meet company deadlines for administrative tasks
- partner with chefs and corporate leaders to develop new recipes and improve menu
- maintain positive vendor relationships
- place food and supply orders
- receive and verify product quality and invoicing
- create work schedules and manage staffing within budgeted labor cost
- ensure kitchen equipment is safe and operational by following cleaning and preventive maintenance procedures
- develop measurable succession plans for Sous Chef and team members
- attend weekly manager meetings to provide updates on food cost, quality, staffing and events
- enhance dining experience through tableside visits and teamwork with dining room staff
- represent the company professionally in restaurant and community
- collaborate with Sales Manager to develop and cost banquet and special event menus
- facilitate daily pre-shift meetings to communicate company and restaurant goals
- create a cohesive kitchen team
- maintain weekly training and skill development focus
- encourage communication between back and front of house
