The Executive Culinary Manager role at the Edison, New Jersey location is a pivotal leadership position responsible for ensuring guests enjoy best-in-class meals and culinary experiences. The successful candidate will lead the kitchen team by supervising all culinary operations within the venue. This includes overseeing the preparation and presentation of food, managing schedules, controlling inventory, and ensuring compliance with food safety and sanitation standards. The Executive Culinary Manager must demonstrate strong culinary management skills alongside exceptional leadership abilities to foster a motivated, skilled, and engaged culinary team. This professional is responsible for coaching and developing team members, optimizing labor and food costs, standardizing recipes to maintain quality and consistency, and spearheading the culinary innovation of menus, especially for special events. Additionally, this role requires close collaboration with upper management, corporate, and vendors to meet business goals and uphold the brand’s outstanding reputation.

Job Requirements

Job Duties

  • Monitor inventory and purchase product
  • Maintain food and labor costs according to budget, with a full understanding of COGS
  • Select and develop recipes to corporate approval
  • Standardize production recipes to ensure consistent quality
  • Establish presentation technique and maintain quality standards
  • Plan and cost menus for special events, chef choice menus
  • Ensure proper equipment operation and maintenance
  • Oversee safety and sanitation in the kitchen
  • Create action plans to respond to opportunities
  • Communicate and effectively partner with upper management, Home Office Leadership and vendors
