The Executive Chef position at Archer Hotel Napa offers a unique leadership opportunity within an innovative and guest-focused environment. This role commands oversight of all culinary operations across the hotel's food services. Job Requirements
- High school diploma or equivalent
- at least 5 years of culinary experience including leadership roles
- knowledge of safe food handling and sanitation practices
- physical ability to stand for extended periods and exert up to 60 pounds of force
- excellent communication skills
- ability to work flexible hours including weekends and holidays
- willingness to perform duties in employees’ absence or during peak periods
- passion for hospitality and commitment to team culture
- ability to follow directions, guidelines and work objectives
- prior hospitality or service industry experience preferred
Job Qualifications
- Bachelor’s degree in culinary arts or related field preferred
- minimum 5 years experience in culinary leadership roles preferably in luxury or boutique hotels
- proven ability to manage kitchen operations and staff training
- strong knowledge of food safety and sanitation regulations
- experience with food and beverage budgeting and cost control
- leadership skills with ability to inspire and develop a team
- excellent communication and interpersonal abilities
- proficiency in using operational systems such as payroll, inventory and purchasing software
- creative culinary skills with focus on guest satisfaction
- ability to work collaboratively with other departments and adapt to fast-paced environment
Job Duties
- Direct and oversee all culinary operations including production of all hotel meals and food quality and presentation
- ensure compliance with all safety and sanitation standards and regulations
- create recipes and production standards
- assist with all performance reviews and monthly one-on-ones
- address and resolve guest and employee concerns
- possess in-depth knowledge of all food and beverage menus
- ensure that the department is staffed sufficiently for each meal period
- maintain P&L authority over the assigned location and department
- identify talent internally and externally including interviewing, hiring and onboarding new associates
- inspect all food service stations during service time to ensure standards and cleanliness
- ensure the general cleanliness of heart-of-house
- ensure completion of opening and closing procedures by BOH employees
- ensure compliance with Department of Health and company sanitation standards
- maintain up-to-date knowledge of market trends to create food products that maximize sales opportunities
- understand employee positions well enough to perform duties in absence or during peak periods
- conduct and attend all departmental meetings
- support budgeted sales and profit goals while maintaining labor efficiency ratios
- monitor and control food and beverage inventories
- manage food preparation
- develop and implement guidelines and control procedures for purchasing and receiving
- work with Food and Beverage Director on capital expenditure needs
- assist in other tasks as requested by management
