Located in the heart of Nebraska's capital city, this hotel is a prominent marker of comfort and celebration hosting a diverse range of events from intimate gatherings to large conferences with its 300 beautifully appointed rooms and over 46,000 square feet of event space. The Executive Chef role at the Lincoln Marriott Cornhusker Hotel is a pivotal leadership position responsible for overseeing all culinary operations across multiple outlets and banquet functions. This role requires a passionate culinary expert who is deeply committed to elevating guest experiences through detail-oriented execution and continuous innovation. The Executive Chef will be tasked with developing and refining menus that align with seasonal trends and business objectives while managing food and labor costs to maintain strong financial performance. This leader will recruit, train, and nurture a high-performing culinary team, ensuring consistency and excellence in food quality and service. Daily duties include directing kitchen operations, maintaining food safety, sanitation, and compliance with all regulatory and brand standards, and fostering strong relationships with internal teams and vendors.

Collaboration with sales, operations, and leadership on strategic initiatives, budgeting, and operational improvements is critical for success in this role. The Executive Chef is also expected to actively engage with guests and clients to support events, enhance the overall guest experience, and uphold the property’s reputation for excellence. Job Requirements

  • 5+ years of Executive Chef experience ideally in high-volume operations
  • Formal culinary training preferred minimum 2 years
  • Leadership skills with ability to build lead and develop teams
  • Strong communication skills
  • Ability to work in fast-paced high-pressure environments
  • Operational knowledge of food products and kitchen equipment
  • Ability to manage multiple priorities with strong organization
  • Financial and analytical skills including budgeting and cost control
  • Proficiency in computer systems for inventory and menu development
  • Physically able to meet role demands including extended standing lifting up to 100 lbs and working in kitchen conditions
  • Required food safety certifications such as ServSafe or equivalent

Job Qualifications

  • 5+ years of Executive Chef experience ideally in high-volume operations with broad knowledge of global and regional cuisines

  • Financial and analytical skills including budgeting forecasting cost control and interpreting reports
  • Proficiency in basic computer systems for inventory menu development and operational management

Job Duties

  • Lead and oversee all culinary operations ensuring brand standards quality and consistency across outlets and banquets
  • Manage departmental financial performance including budgeting labor inventory and cost controls
  • Design and evolve menus based on trends seasonality and business needs including special events and banquets
  • Recruit train develop and manage culinary team members maintaining a high-performance and accountable culture
  • Direct daily kitchen operations including scheduling production and service execution to meet demand and standards
  • Maintain strict food safety sanitation and compliance with company brand and regulatory requirements
  • Build and maintain strong relationships with internal teams F&B stewarding banquets and external vendors
  • Ensure cleanliness organization and maintenance of all back-of-house areas and equipment
  • Collaborate with leadership on strategic initiatives budgeting guest experience and operational improvements
  • Engage with guests and clients as needed to support events enhance experiences and represent the property externally
  • Perform other duties as assigned
