This management position within the Food and Beverage & Culinary department is a full-time opportunity based at the Dallas Marriott Downtown. Offering an annual salary range of $109,000 to $146,000 with bonus eligibility, this role is pivotal to the hotel's daily culinary operations and overall guest satisfaction. The position demands a dynamic leader who can effectively balance hands-on culinary expertise with strategic operational management. Reporting directly to the executive team, this role is accountable for the overall success of kitchen functions that include banquets, room service, restaurants, bar/lounge, and employee cafeteria, along with support operations such as dish room and purchasing.

The key responsibilities involve leading the kitchen management team and ensuring the delivery of a consistently high-quality food product that meets stringent Marriott brand standards. This includes hands-on involvement in food preparation and presentation, guiding and developing culinary staff, ensuring compliance with sanitation and food safety regulations, and aligning kitchen operations with financial performance goals. By setting and maintaining rigorous culinary and operational standards, the successful candidate will directly contribute to enhancing guest experiences and employee engagement.

Job Requirements

  • High school diploma or GED
  • Six years experience in culinary, food and beverage, or related professional area
  • Or 2-year degree from accredited university in Culinary Arts, Hotel and Restaurant Management, or related major
  • Four years experience in culinary, food and beverage, or related professional area
  • Strong leadership and communication skills
  • Ability to perform duties in absence of employees
  • Knowledge of food handling and safety procedures
  • Ability to manage budgets and departmental expenses
  • Experience in staff training and performance management

Job Qualifications

  • High school diploma or GED with 6 years experience in culinary or related area
  • OR 2-year degree in Culinary Arts, Hotel and Restaurant Management, or related with 4 years experience
  • Demonstrated leadership and team management skills
  • Strong interpersonal and communication abilities
  • Knowledge of food safety regulations and sanitation standards
  • Experience in budgeting and cost control
  • Ability to develop menu and maintain quality standards
