The Executive Chef role at American Cruise Lines is a prestigious and dynamic position, perfect for culinary professionals seeking to lead in a fast-paced, team-oriented environment while traveling the nation. The Executive Chef is responsible for delivering an unforgettable culinary experience that embraces the diverse flavors of each region visited by the ship. This role demands expertise in planning, preparing, and presenting elevated cuisine using fresh, locally sourced ingredients that celebrate regional culinary traditions. The Executive Chef will mentor and lead a galley team of 6-10 members, ensuring high standards of taste, presentation, kitchen safety, and overall operational efficiency.

This position offers the unique opportunity to work full-time aboard a cruise ship, embarking on 6 to 8-week voyages followed by 1 to 2 weeks off. The Executive Chef will work 7 days per week while onboard, adapting swiftly to last-minute changes with a calm, positive approach. They are pivotal in maintaining FDA and sanitation standards and overseeing food inventory, portion control, and waste reduction efforts. The ability to thrive amid the six constant motions of the ship, effectively manage multiple priorities under pressure, and provide exceptional guest dining experiences is essential.

Ideal candidates have 6 to 8 plus years of experience in full-service resorts, hotels, country clubs, or banquet environments, along with relevant certifications such as ServSafe Manager. Leadership, communication, and training skills are critical, as is the ability to comply with rigorous safety protocols including passing a pre-employment drug test and background check, and possessing a Transportation Worker Identification Credential (TWIC).
