The Executive Chef oversees kitchen operations, ensuring a safe and sanitary work environment for the kitchen staff while directing meal preparation according to corporate programs and guidelines. This is far from a traditional chef position, as it demands leadership in food production, adherence to quality and safety standards, and innovative menu planning. The Executive Chef plays a pivotal role in the kitchen by planning menus that align with established guidelines, standardizing recipes, overseeing food portioning and presentation standards, and ensuring compliance with regulatory health and sanitation requirements.
In this role, you will train kitchen staff in food preparation techniques, safe handling practices, and the operation of kitchen equipment, all while fostering a culture of safety through adherence to company and local regulatory standards. Maintaining inventory within set guidelines and managing leftover food utilization responsibly are part of the day-to-day functions. Job Requirements
- Associate degree or equivalent experience
- minimum 5 years culinary or kitchen management experience
- strong leadership and communication skills
- knowledge of food safety and sanitation regulations
- ability to train and supervise kitchen staff
- proficiency in computer applications including Microsoft Office
- ServSafe certification preferred
- willingness to participate in client satisfaction programs
- ability to comply with health and safety policies
- ability to maintain inventory and manage food costs
Job Qualifications
- A.S. or equivalent experience
- 5+ years of progressive culinary/kitchen management experience
- extensive catering experience a plus
- high volume, complex foodservice operations experience
- institutional and batch cooking experiences
- hands-on chef experience
- comprehensive knowledge of food and catering trends
- experienced with computers including Microsoft Office, Outlook, E-mail and Internet
- willing to participate in client satisfaction programs
- ServSafe certified highly desirable
Job Duties
- Plans regular and modified menus according to established guidelines
- follows standardized recipes, portioning and presentation standards
- completes and utilizes daily production worksheets and waste log sheets
- tastes completed meals to ensure quality
- trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation
- establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas
- maintains inventory of food and non-food supplies to stay within established guidelines
- makes all decisions regarding utilization of leftover food products
- complies with federal, state and local health and sanitation regulations
- follows facility, department, and company safety policies and procedures
- participates and attends departmental meetings, staff development, and professional programs
