The Executive Chef is entrusted with instituting company cycle menus and recipes, planning and overseeing purchasing, personnel training, scheduling, and record keeping. This position demands leadership that drives food preparation, service, and sanitation while maintaining compliance with HACCP regulations, Occupational Safety Standards, and proper maintenance procedures. The Executive Chef plays a critical role in meeting financial objectives by managing labor and resources efficiently. This role reports directly to departmental leadership and collaborates closely with General Managers and administrative staff to address customer feedback and uphold Metz Culinary Management standards.
In executing these responsibilities, the Executive Chef ensures the highest level of food quality and service, promotes continuous training and development among supervisors and team members, and maintains accurate records and inventory reports. The position involves working in a dynamic, sometimes noisy and distracting kitchen environment with exposure to hot and cold temperatures, demanding physical stamina and attention to safety. Security clearance including FBI fingerprinting and background checks is required due to the hospital setting. Job Requirements
- Five years of food service management experience
- Serve-Safe certification
- Ability to perform FBI fingerprinting, criminal background check, and Child Protective Services registry search
- Ability to work in noisy and distracting kitchen environments
- Capability to endure exposure to hot and cold temperatures
- Physical ability to handle tasks with potential cuts or minor burns
- Strong mentoring management style

Job Duties
- Maintaining the highest level of food quality and service in accordance with company values
- Developing plans to meet corporate and client objectives in conjunction with supervisors
- Reviewing daily production plans with staff to meet storage, production, and service needs
- Ensuring food quality and selection meet customer needs and company standards through monitoring food service lines
- Directing and reviewing team on HACCP regulations, occupational safety standards, and proper maintenance procedures
- Training supervisors continuously and upgrading employee skills while recommending personnel changes
- Maintaining accurate records including inventory, operation reports, and financial documentation
- Addressing customer complaints and feedback in collaboration with General Manager
- Conducting weekly meetings with supervisory team and food service employees
- Communicating regularly with administration to manage personnel issues
- Leading, managing, coaching, and training the culinary team for optimal performance
- Overseeing recruitment, hiring, orientation, performance appraisals, and disciplinary actions
- Performing other tasks as requested by the General Manager
