The Executive Chef position at LSG Sky Chefs in Portland offers a unique opportunity for an experienced culinary leader to helm a high-volume food production environment with a focus on innovation and quality assurance. This is a full-time, on-site role with a competitive salary range from $80,015.93 to $100,019.91. The Executive Chef will play an integral role in coordinating and overseeing every aspect of dining service preparation, ensuring compliance with food safety and quality standards while developing menus that satisfy both industry trends and client preferences. This position demands a strategic mindset and hands-on leadership to manage kitchen staff, control production costs, and maintain alignment with corporate culinary goals.

Key responsibilities include overseeing large-scale food production activities, crafting and refining menus, managing inventory and budgets, and ensuring food safety through strict adherence to standards such as HACCP (Hazard Analysis and Critical Control Points). The Executive Chef will serve as a cultural ambassador for the company, mentoring kitchen teams to foster a productive, motivated workforce aligned with LSG Sky Chefs' values and management principles. Additionally, the Executive Chef will stay abreast of current trends in the culinary field, including research and development of new food products, and actively participate in promotional and marketing efforts.

Job Requirements

  • Bachelor's degree preferred
  • five to seven years of relevant commercial cooking experience
  • minimum two years in management role
  • certification or apprenticeship from recognized culinary school preferred
  • knowledge of food hygiene and safety regulations including HACCP
  • proven financial management skills
  • excellent leadership and communication abilities
  • ability to work in a fast-paced, high-volume production environment

Job Qualifications

  • Five to seven years of experience in commercial cooking, at least two years in a management position
  • apprenticeship or certification course from culinary school preferred
  • additional certifications (e.g. diet chef, industrial chef) or equivalent professional experience preferred
  • knowledge of food and hygiene regulations (e.g. HACCP)
  • financial understanding

Job Duties

  • Oversees all food production activities in responsible CSC
  • responsible for deviations in inventories, initiates countermeasures if necessary
  • controls and adjusts production plans, estimates consumption of food and equipment
  • ensures compliance of recipe specifications and conducts sense-checks
  • participates in the development of food products and menus
  • must be aware of content in catering manuals
  • updates and distributes them within responsible CSC
  • responsible for cost controlling of the budget, personnel and material costs
  • participates in menu presentations
  • coordinates and controls countermeasures in the production in case of customer complaints
  • checks service schedules, assesses economic profitability and conducts sense-checks
  • establishes training strategy and training plans for kitchen staff in responsible CSC
  • represents kitchen and kitchen staff in front of external stakeholders
  • keeps himself/herself up to date regarding industry trends (research & development, food trends) and ensures alignment with design chefs
  • ensures that the appropriate production technology is in place
  • participates in marketing activities
