Job Requirements
- Serv Safe Certification within the first available class following employment and maintain certification
- valid food handler’s card if required in the state
- ability to stand over two-thirds of the time
- ability to walk over two-thirds of the time
- ability to lift up to 50 pounds
- willingness to work minimum 45-50 hours per week
- flexible availability for up to three special events per semester
- dependable and responsible work ethic
- strong attention to detail
- ability to maintain composure and self-control under stress
- good cooperation and communication skills
- physical ability to perform tasks involving stooping, kneeling, standing, walking, lifting, tasting, and smelling
- valid driver’s license if required for transfer to other worksites
Job Qualifications
- 2-3 years lead sous or executive chef experience
- culinary degree preferred
- ability to read and interpret safety rules and maintenance instructions
- ability to write routine reports and correspondence
- effective verbal communication skills
- working knowledge of compliance software, database user interface and query software, inventory management software, and Greek House Chefs App
- proficient with commercial kitchen equipment including blenders, broilers, convection ovens, cutlery, deep fryers, and mandolin slicers
- strong coordination and monitoring skills
- active listening and critical thinking abilities
- good judgment and decision making
- ability to communicate clearly with chefs and students
- knowledge of workplace safety procedures
- instructing and negotiation skills
- service orientation and social perceptiveness
Job Duties
- Ensures overall health of the account is positive and in good standing
- plans and directs food preparation and culinary activities
- modifies menus or create new ones that meet quality standards
- recruits and manages kitchen staff
- purchases and orders food supplies while managing budget
- manages employee’s schedules and hours
- manages the GHC App
- ensures the overall cleanliness of the kitchen meets and exceeds GHC health and equipment cleaning standards
- makes periodic inspections of units to observe quality of food preparation and service, food appearance, and cleanliness and sanitation
- coordinates all training activities for kitchen and other production and service employees
- follows proper training manual procedures for equipment item requests
- develops recipes and portion specifications in accordance with GHC standards
- creates and submits menu two weeks ahead for approval
- submits budget via the GHC App on time weekly
- checks with campus manager on weekly reports of app reviews
- schedules and attends food committee reviews at least once a month
- maintains a pleasant appearance and clean GHC Blue Embroider chef coat
- works minimum of 45-50 hours per week
- receives trucks and checks for quantity and quality
- keeps availability open for up to 3 special events per semester and plans these events accordingly
- maintains positive and professional working relationships with vendors, directors, and clients
- works with management to establish account specific service procedures and implements training
- monitors schedule and time management responsibilities for self and onsite staff
- demonstrates strong knowledge of GHC Handbook
- transfers to other worksites as deemed necessary
- performs other duties as assigned
