Job Requirements

  • High school diploma or equivalent
  • Minimum of 3 years specialized culinary experience
  • Must be 21 years of age or older
  • Must pass all required pre-screening and background checks
  • Internal candidates must have been in current position for at least six months with no active disciplinary action
  • Ability to work various shifts including day, swing, late-night, weekend, and holiday shifts
  • Must obtain required work cards and non-gaming registration as per local jurisdiction
  • Ability to move around the work area for entire shifts
  • Capability to sit, stand, or walk for extended periods
  • Ability to repeat same physical movements
  • Strong communication skills with coworkers, vendors, and guests
  • Ability to work safely and responsibly
  • Able to lift and carry up to 50 pounds
  • Ability to distinguish letters and symbols and hand-eye coordination

Job Qualifications

Job Duties

  • Support the Assistant F&B Director in food quality, cost control, inventory and training back of house team members
  • Oversee food operations for the Café and Banquet departments effectively and efficiently
  • Participate in financial review processes including researching, responding to inquiries and reporting results
  • Provide recipes, measurements, and quantities to ensure consistent food creation
  • Train Sous Chef and culinary team on recipes and monitor adherence
  • Monitor and enforce standard kitchen operating procedures
  • Provide leadership, training, mentoring, and corrective counseling to back of house staff
  • Assist in interviewing, selecting and onboarding new back of house hourly team members
  • Schedule staff and assist with payroll activities
  • Communicate effectively with front of house management and staff
  • Ensure all prep items and recipes meet approved standards
  • Oversee kitchen line during service and monitor progress to avoid delays
  • Manage kitchen and food flow to maintain service standards
  • Review daily prep sheets with Sous Chef
  • Collaborate on menu development and daily specials
  • Adjust and update recipes or procedures as needed
  • Manage inventory and costs in dining outlets
  • Conduct regular inventory to maintain par levels
  • Control waste, food costs, and labor costs
  • Process requisitions and ensure product standards
  • Maintain knowledge of food products and proper rotation
  • Train staff on safe equipment use and sanitation practices
  • Resolve guest complaints about food quality promptly
  • Use kitchen equipment and sanitizing products safely
  • Provide excellent internal guest service
  • Maintain professional, trusting, and positive relationships
  • Complete work activities accurately and efficiently
  • Adhere to company safety policies and emergency protocols
  • Maintain regular attendance and professionalism
  • Assist in training and mentoring new team members
