Job Requirements
- Minimum of 3 years of specialized culinary experience
- high school diploma or its equivalent
- must be 21 years of age or older
- must pass all required pre-screening and background checks
- internal candidates must have been in current position for at least six months with no active disciplinary action
- ability to work day, swing, late-night, weekend, and holiday shifts
- must be able to obtain required work cards and non-gaming registration
- ability to move throughout the work area all day
- able to sit, stand, or walk for extended periods
- able to repeat movements
- able to engage and interact appropriately with guests in a fast-paced environment
- able to communicate regularly with coworkers, vendors, and guests
- able to provide assistance professionally
- able to access and interpret computer information
- able to work in an environment with smoking, loud noise, and live entertainment
- able to lift and carry up to 50 pounds
- able to distinguish letters or symbols and coordinate eye-hand movements
Job Qualifications
- Minimum of 3 years specialized culinary experience

- experience in kitchen operations and food cost control
- knowledge of food safety and health department standards

- ability to train and develop staff
- proficiency in inventory and financial oversight
- ability to adapt recipes and menu items per trends and standards
- ability to work various shifts including weekends and holidays

Job Duties
- Manage daily kitchen operations and ensure recipe consistency
- lead a team of Sous Chefs and hourly staff including scheduling and recruitment
- oversee food operations for the Cafe and Banquet departments
- participate in financial reviews, cost control, and inventory management
- train and mentor culinary staff in recipe adherence and kitchen procedures
- ensure health and safety standards compliance
- resolve guest complaints about food quality or preparation
- collaborate with front of house management to maintain service flow and standards
- develop and update menu items with the Assistant F&B Director
- supervise kitchen equipment use and sanitation
- maintain proper labeling, rotation, and safekeeping of food products
- maintain professionalism and a friendly demeanor in a fast-paced environment
- assist with new team member training and onboarding
- communicate effectively across teams
- maintain regular attendance and adherence to uniform and appearance guidelines
