Job Requirements
- Minimum 3 years experience in a restaurant or bakery focusing on bread and viennoiserie
- At least 2 years of managerial responsibilities
- Proficiency in bread-making techniques and dough handling
- Knowledge of viennoiserie techniques
- Strong communication skills
- Ability to work independently and as a team
- Knowledge of health and safety regulations
- Ability to operate bakery equipment including dough sheeters
- Ability to lift, push, and pull up to 50lbs
- Flexible availability including weekends and holidays
Job Qualifications

Job Duties
- Supervise entire bread production process from mixing to baking and packaging
- Produce daily items including viennoiserie, bread, croissants, and cookies
- Ensure all bread products meet established quality standards including taste, texture, appearance, and freshness
- Adjust production schedules to meet customer demand while minimizing waste
- Open the bakery at 3 AM and lead the early morning team
- Train, motivate, and schedule bakery staff to ensure smooth workflow
- Monitor staff performance and provide feedback
- Maintain and enforce strict quality control procedures
- Conduct regular inspections and tastings to ensure product quality
- Oversee inventory of ingredients and supplies, place orders and manage stock levels
- Ensure all bakery equipment is maintained and coordinate repairs
- Adhere to health and safety regulations and train staff in safety protocols
- Maintain production records including ingredient usage, batch recipes, and schedules
